A field trip, a harvest, and a few brave bites 🌱

Last week, students from Albany's Roots Academy visited our Learning Garden, where they harvested spinach, garlic chives, and mint before helping turn their fresh-picked ingredients into cheesy potato tacos.

Along the way, students explored the garden, tasted spinach straight from the field, and practiced one of our favorite skills: being brave enough to try something new.

The final verdict? Judging by those thumbs-up, the tacos were a hit. 👍

🎥🌮 What does it take to tell a great food story?

Recently, students in our Teen Culinary Apprenticeship welcomed food journalist and videographer Sergio Scardigno for a hands-on lesson in food videography.

While preparing enchiladas together, students learned how professionals capture cooking content—from lighting and camera angles to close-up food shots and behind-the-scenes storytelling. They then stepped behind the camera themselves, documenting the cooking process from prep to plate.

Experiences like these help students explore the many careers connected to food, while building creativity, communication skills, and confidence along the way.

Thank you, Sergio, for sharing your expertise with our students!

🥒 Curious about pickling? Want to waste less food and add a little extra flavor to your cooking?

Join The Sylvia Center Upstate Programs Coordinator Leo for a hands-on Pickling & Fermenting Workshop at Spark of Hudson on June 8.

In the 90-minute session, you'll learn how to make your own pickles using seasonal produce, explore the basics of fermentation, and learn simple techniques for preserving vegetables at home. He'll cover everything from quick pickles to fermented staples like kimchi and sauerkraut.

You'll leave with your own jar of pickles, practical skills you can use right away, and plenty of inspo for making the most of the season's harvest.

✨ Program Highlight: Albany High School Life Skills Program

This month, we're highlighting our partnership with the Life Skills Program at Albany High School.

Chef Educator Sarah has been cooking alongside 17–21-year-old students in the school's Special Education Department, exploring new foods, building kitchen skills, and having plenty of fun along the way.

Together, they've made everything from breakfast burritos and plantain curry with rice to zucchini fritters and muffins. They've talked about flavor, tried new ingredients, and approached every class with curiosity, focus, and a healthy pinch of humor.

One moment from this month really stuck with us.

While making zucchini muffins, a student who had spent much of the program reluctant to participate found his groove while grating zucchini. That confidence carried right over into slicing scallions, turning something that was usually met with a "no thank you" into a challenge he was excited to take on.

The class was skeptical about putting vegetables into a muffin, too. But after baking nearly a dozen extra, there wasn't a single one left over.
Sometimes the best moments happen when students surprise themselves.

Thanks for having us, Albany High—we can't wait to keep cooking together!

After four years of leadership, Barbara Glassman will be stepping down as Chief Executive Officer of The Sylvia Center on June 30, 2026.

During her time with the organization, The Sylvia Center has grown significantly, reaching more young people and families across New York City and the Hudson Valley while strengthening the foundation that supports our work.

Most importantly, that growth has meant more students gaining access to hands-on culinary education—learning to cook, explore new foods, build confidence, and develop lifelong skills.

We're grateful to Barbara for her leadership, partnership, and commitment to The Sylvia Center's mission over the past four years.

As we look ahead, we remain focused on what has always guided our work: creating healthy communities through the power of cooking.

Tiny seedlings now, popcorn later 🌽

Julie and the Learning Garden team spent last week transplanting Golden Jubilee sweet corn and Glass Gem popcorn into the field beds at Katchkie Farm.

We love to use fresh corn in our programs: our favorite recipes? Popcorn Tacos, Indigenous Succotash, and Cachapas (Venezuelan corn cakes with cheese).

Beautiful AND delicious.

Fresh herbs. Fresh air. Fresh perspectives. 🌿

Recently, we welcomed a team of volunteers from Meridian Compensation Partners to Highbridge Green Middle School in the Bronx for an afternoon of cooking, gardening, and community engagement with TSC students.

Together, students and volunteers harvested ingredients from the school's rooftop garden, explored fresh herbs through smell and taste, prepared seasonal recipes, and shared a meal together.

Moments like these help bring our mission to life—connecting young people to fresh food, hands-on cooking, and the communities around them.

A big thank you to Meridian Compensation Partners for spending the day with us!

🥟🌶️ Students from our Cooks for Health programs brought the heat to Grand St. Settlement’s annual AAPI cook-off last week—celebrating the richness and diversity of Asian cultures through food.

Representing partner sites across Lower Manhattan, student teams spent weeks recipe testing, practicing techniques, learning about their assigned countries, and preparing dishes to compete live in front of judges and an audience.

This year’s dishes included:
🥭 Burmese Bein Mont with sesame “brandy” sauce, whipped cream & mango sauce
🍍 Thai Pineapple Fried Rice
🥟 Nepalese Momos
🧆 Sri Lankan Dhal Wade
🥢 Bhutanese Toh-tse

Taking home first place was Transfiguration School, supported by TSC educators Gabriel and Georgia, with their beautifully executed Bein Mont 🍽️✨

Beyond the competition itself, students built confidence, teamwork, communication skills, and culinary technique—all while exploring culture and community through cooking.

Huge congratulations to every student who participated, and a massive shout-out to our educators for supporting them every step of the way 💚
And huge thanks to our Culinary Council and Board members who judged!

Adult Farm Campers back at Katchkie 🌱

Last Friday, Julie welcomed Jennifer, Chet, and Deb back to the Learning Garden for a hands-on spring garden consulting session focused on waking up the garden after winter: bed prep, seed starting, planting tips, and getting ready for the growing season ahead.

A lovely way to kick off another season at the farm 💚
