Lately, I’ve been scaling back my farmers market hauls. Mainly because I am not getting through everything I purchase before the next trip! 🙃🤣

This week, I refreshed a few staples and made a super veggie-forward salad to go with one of my favorite dishes: Vietnamese spring rolls. Over the years, Vietnamese cuisine has become one of my absolute favorites. I’ve learned a lot through experimenting in my own kitchen and exploring authentic flavors at restaurants. I love how herbaceous the dishes are.



These spring rolls are made with a classic pork and shrimp base, paired with a fresh, vibrant salad. It’s the kind of light, refreshing meal that still feels filling which feels perfect for summer.

This salad has rice noodles, romaine lettuce, cucumber, carrots, shallots, scallion, mint, basil, peanuts. I also made a traditional Vietnamese dressing which is made with lime juice, garlic, ginger, and chilis.

While I won’t miss the extreme heat, I will miss the ease of grabbing fresh, local fish and amazing produce from the farmers market. There’s just nothing like it.
