Creamy Chicken Corn Chowder🍲🍲🍲

-This hearty and creamy chicken corn chowder is perfect for colder weather and makes a satisfying meal on its own. Serve it with crusty bread for a complete and comforting experience.

Ingredients:

1 cup chicken broth
2/3 cup cubed peeled potato
1/2 cup frozen corn
1/4 teaspoon minced garlic
1/8 teaspoon dried marjoram
1/8 teaspoon dried thyme
1/8 teaspoon pepper
2 tablespoons all-purpose flour
2/3 cup 2% milk
2 ounces Velveeta, cubed
2/3 cup cubed cooked chicken breast

Directions:

-In a large saucepan, combine the broth, potato, corn, garlic, marjoram, thyme and pepper. Bring to a boil. Reduce heat; cover and simmer until potatoes are tender, 15-20 minutes.

-Combine flour and milk until smooth; gradually add to vegetable mixture. Bring to a boil; cook and stir until slightly thickened, about 2 minutes. Reduce heat; stir in cheese until melted. Add the chicken; heat through.

Chicken and risoni soup❤️❤️

-This recipe demonstrates how underappreciated the ingredient risoni is. This soup's leftovers can be stored in the freezer for up to two months.

Ingredients:

2 tbs extra virgin olive oil
1 small (about 1.5kg) whole chicken
1 onion, finely chopped
1 fennel bulb, finely chopped
3 garlic cloves, crushed
3 bay leaves
3 thyme sprigs
1 tsp fennel seeds
800g can cherry tomatoes
4 cups (1L) chicken stock
3/4 cup (120g) Sicilian green olives
Finely grated zest & juice of 1 lemon
1/2 cup (110g) risoni (orzo)
3/4 cup flat-leaf parsley leaves, chopped
Pesto (optional), to serve
Toasts, to serve

Directions:

-Preheat oven to 220°C. Heat oil in a large heavy-based ovenproof saucepan over medium-high heat. Add chicken, breast- side down, and cook, turning regularly, for 10 minutes or until browned all over.

-Turn chicken breast-side up. Add vegetables, bay leaves, thyme, fennel seeds, tomatoes, stock, olives and lemon zest. Season and stir to combine.

-Bring to the boil, cover with lid and place in oven for 30 minutes. Add risoni, stir to combine and cook for a further 15-20 minutes until pasta is al dente. Remove from oven, place lid ajar and leave to rest for 10 minutes. Transfer chicken to a plate to cool slightly, then shred meat, discarding skin and bones.

-Bring soup to the boil over medium- high heat. Add 1 cup (250ml) water to loosen soup, reduce to a simmer and return shredded chicken to pan. Stir for 1-2 minutes to warm through. Remove from heat and gently stir in lemon juice and parsley.

-Divide soup among serving bowls. Top with a dollop of pesto, if using, and serve with toasts.

Broccoli Apple Soup❤️❤️

-This soup is tasty, warming, and affordable. Ralph, a close family friend, came up with the idea and gave it to me. It's so well-liked that a painter was hired to create a rendering of the components! A dish filled with warmth and affection may be made with just a few basic components that come together nicely.

Ingredients:

1 large head of broccoli
3 large apples (Golden Delicious or McIntosh are good)
2 tablespoons butter
1 large onion, diced
6 cups vegetable broth
salt and pepper to taste
plain yogurt to garnish (optional)

Directions:

-Cut the broccoli florets off the stalk and set aside. Cut the stalks into 1-inch pieces. Peel the apples, core and cut into 1-inch pieces.

-In a large soup pot, melt the butter over medium heat. Add the onion and apple chunks. Saute about 6 minutes. Add the broth and the broccoli stalks. Bring the soup to a boil, reduce heat to low and cover. Simmer for 20 minutes.

-Add the broccoli florets to the soup and simmer for 5 more minutes. Remove from heat.

-Using an immersion blender, puree the soup until smooth. Season with salt and pepper to taste. Garnish with yogurt if using.
