Tips for eating well on vacation if you're traveling to a place by car that has a kitchen:
1. Prep some easy meals in advance. This does mean traveling with a cooler! Think about recipes that can travel well like putting marinade and meat in a ziplock bag, a casserole that can be made ahead and baked later, or lean ground beef and hamburgers for a fun grilling night.
2. Pack vegetables that are easy to throw on the table. Salad, carrots and hummus, or broccoli that can be tossed in olive oil and salt and roasted.
3. Have plenty of delicious fruit available in the fridge for snacking. This is the best time for amazing sweet fruit! Whether it is strawberries, blueberries, peaches, or whatever is your favorite, have it ready for hands that want to snack!
4. If you want food that you don't normally eat, get it! You're on vacation and you should be able to try and enjoy different things!
