Trying to find a delicious whole food plant based breakfast can be a challenge. We often rotate between oatmeal and tofu burritos. Today we felt like being different so we made pancakes!!

The recipe is simple. 1 cup oats, 2/3 cups non-dairy milk, 1/2 cup applesauce (or you can use a banana), optional tbsp of chai seeds, and we used a dash of cinnamon for fun. You can add nuts or fruit or different baking spices. Blend it all up and throw them on a griddle or pan! We topped ours with fresh fruit and agave!
