This syrup is so simple to make! And so good!
Elderflower Simple Syrup:
Harvesting ithis fragrant, beautiful flower is heavenly!
Pick a bag (a regular plastc grocery bag) full of blossoms, enough to come to the top of whatever pan you will cook in.
Shake clean. Do not rinse.
Measure equal amounts of water and sugar. Pour over elderflowers.
Bring to almost a boil and stir in grated rind of 1 lemon. Stir slowly very well. Turn heat off and let steep for 24-48 hours.
Scoop flowers out. Pour remaining syrup through fine sieve and back into pot. Heat again, almost to boiling.
To sterilize jars:
Cover empty canning jars with water and bring to a low boil for 10 min.
Take jars out with tongs, fill with hot syrup, close lid, label.
To enjoy, pour a quick shot into sparking ice water, vodka or stir into yogurt or hot tea as sweetener.
