Colonel Beach’s Plantation Punch
1 ounce fresh lime juice
2 ounces unsweetened pineapple juice
2 ounces Dark Jamaican rum
1 ounce Cruzan Amber
1/2 ounce gold 896 Barbados 8 year rum
1/2 ounce BG Reynolds falernum
Hard dash Angostura bitters
6 drops Pernod (1/8 tsp)
2 ounces Fever Tree ginger beer (hold for last)
Build all ingredients in shaker tin over good ice except ginger beer. Whip shake to chill, prepare a big glass with 3-4 good ice cubes - now, my deviation: pour 2 oz ginger beer into glass, over ice, then dump unstrained into glass - it does the lovely trick of combining perfectly. Garnish with mint sprig and citrus wedge. Enjoy!!
The Reynolds falernum is spicier than the Taylor, it really punches through the juices and connects with the ginger beer in a delightful way.
This is a big drink that comes on easy - but remember, it’s got 3 1/2 oz of booze hidden in there. It will creep right up on you.
