The burgeoning dairy industry, driven by the immigration of Swiss and Portuguese dairymen to the Salinas Valley, relied on the alfalfa crop to produce cheese, butter, and evaporated milk. Dairymen sought out this particular crop to feed their milking cows. By 1910, about 30,000 acres of alfalfa were irrigated by gravity systems and an additional one hundred pumping plants in the Salinas Valley. By 1914, Soledad had a population of 400 and was flourishing in dairying and sugar-beet raising. The Spreckels Sugar Company operated two ranches near Soledad, totaling 6,200 acres. Three creameries were built in Soledad: The Meyenberg Milk Co., Borden's Alpine Milk Co., and United Milk Company. The growing of alfalfa and the invention of evaporated milk launched dairying as the first major industry in the Salinas Valley at the beginning of the 20th century. By 1925, Monterey County was California's top dairy producer, milking over 400 dairies and 25,400 cows.

Two years after the railroad arrived, Soledad came into being as a settlement in 1874. By the end of 1875, the town's growth was evident with a store, two small hotels, a feed yard, and express post office. The population of Soledad in 1875 was listed as 54 persons, consisting of 32 males and 22 females. Frolli's Hotel, pictured here around the early 1900s, was owned by S.B. Frolli. In 1888, Mr. Frolli's first hotel burned down and he was committed to rebuilding. The Salinas Daily Index reported on May 28, 1901, that S.B. Frolli "arose Phoenix-like from the ruins, and with confidence in the future of Soledad soon erected the fine, fire-proof building he now occupies."

The Rumsen and Esselen people were the First Peoples who lived along this part of the Central Coast for thousands of years. The abundance of natural resources allowed these hunter-gatherers to rely heavily on fish and game to sustain themselves. This mission, made of native yellow sandstone blocks from the nearby Santa Lucia Mountains, was designed by Manuel Ruíz, a master mason from Mexico City who also designed the Royal Chapel in Monterey. The mission was established at this location on August 1, 1771. A unique feature of this mission is a Moorish window, often called the "star window," over the entrance. It appears to be made from a combination of a circle and a square placed at an angle. This was the second of 21 missions built in Alta California. For 30 years, Mission San Carlos Borromeo served as the headquarters of the California missions. California’s first library, founded in 1778 and housing 30 books, was located at this mission.

The first crop of shipped lettuce in 1921 yielded 37 carloads via railroad. By 1952, the Salinas Valley was known as one of the nation's leading agricultural shipping centers, producing over 59,000 carloads of perishables for Southern Pacific Railroad. Salinas alone produced around 42,000 carloads of these perishable shipments.

Over the weekend, I heard someone complain that Veteran’s Day should always fall on a Monday so that we can all have a three-day weekend. They might not have realized that Veteran’s Day is specifically observed on November 11th for a reason. Originally called Armistice Day, it was meant to not only commemorate the end of World War 1, but to memorialize the exact time the great guns all along the Western Front fell forever silent: It was at 11 am on the 11th day of the 11th month of 1918.

In a world that increasingly opts for convenience over meaning, I’m glad we haven’t moved this day for the sake of an extended weekend. Here’s wishing all veterans the honor and respect they are due…tomorrow, today and every day.
