For a summer treat full of health benefits, why not make fruit roll ups? The photo below was created in my kitchen with dragon fruit picked from my trees.

It is an easy to carry around snack, providing a quick energy boost, low in fat, and can satisfy a sweet tooth.

There are no artificial ingredients and great for those with allergies who avoid store bought items.

This homegrown project is a great way to spend time with your kids during these hot summer days. Enjoy!

Seasonal Fruit – Berry Good Information!

President and Founder, Nada Cory, presented the second of three summer wellness workshops for The School District of Palm Beach County’s Wellness Champions. Under the direction of Carlye Fabrikant, MS, CWP, Wellness Coordinator for Risk & Benefits Management, employees participated in an engaging online workshop—one of many wellness programs offered during the workday.

This session focused on seasonal berries and melons, highlighting how to shop for, prepare, and enjoy these delicious fruits in simple, healthy ways for individuals and their families.

Participants learned that berries—including strawberries, blueberries, raspberries, and blackberries—are packed with antioxidants, fiber, and vitamin C, which help support the immune system, promote heart health, and fight inflammation. Melons, such as watermelon and cantaloupe, are naturally hydrating and rich in vitamins A and C, potassium, and other nutrients that support healthy skin, eye health, and overall wellness.

Two "Cooking with Nada" videos demonstrated just how easy it is to incorporate these nutrient-rich fruits into everyday meals. Featured recipes included Seasonal Berry Breakfast and the refreshing Melon Cooler, both offering delicious ways to enjoy the flavors and health benefits of summer produce.

Of course, every Wellness Champions workshop includes a fun challenge! Participants are encouraged to create their own healthy recipes using seasonal fruits and share their creations with the group. We look forward to seeing the inspiration and creativity that this challenge brings.

We can't ever hear it enough.

We would like to thank for sending this beautiful foldout card from her afterschool club. Plumosa School of the Arts K-8 in Delray has been one of our longest running gardens, with a very creative media specialist/garden sponsor leading the way to health and wellbeing.

An extra special surprise in our mailbox on this sunny day.

JPCF Garden Club was busy this week celebrating Earth Day at Loxahatchee Grove Elementary with their students in the Garden Club! 🌎😍
Nada Cory lead the lesson and the students were keen to share the ways to treat our Earth with respect and kindness. Our Gardens of Hope are welcomed at many schools and communities in South Florida and JPCF loves to share and teach!

“It’s Greek to Me!” 🇬🇷

Our final Cooking with Nada class wrapped up with a thoughtfully curated menu of Greek-inspired dishes—completely gluten, dairy, and sugar free! From vibrant flavors to fresh, wholesome ingredients, it was a celebration of both culture and creativity in the kitchen.

Students soaked in the beautiful day, enjoying the flexibility of both indoor and outdoor cooking spaces. We were thrilled to welcome some new “chefs” alongside our seasoned students, all coming together to share in the joy of learning and delicious food. While it’s bittersweet to close out this year’s lessons, we’re already looking forward to an exciting new 2026–2027 season launching this fall. Stay tuned!

Looking for something fun, meaningful, and delicious to do? Join us for Cooking with Nada—where every class is more than just a great meal. It’s a chance to laugh, learn, and connect while creating dishes you’ll be proud to share.

But what makes these classes truly special is the impact beyond the kitchen. Every dollar raised helps grow our Gardens of Hope program—bringing organic gardens into schools and providing ongoing education that empowers the next generation to understand where their food comes from.

When you sign up, you’re not just cooking—you’re planting seeds of change. Come for the experience, stay for the purpose, and leave knowing you’ve helped something beautiful grow. Class fees are paid to the Joseph P Cory Foundation.
