CIP — THEORY AND PRACTICAL INSIGHTS

Clean beer starts with clean equipment.

At the New Mexico Brewers Guild Technical Conference, we’ll take a closer look at one of the most important — and sometimes overlooked — parts of brewery operations: Clean-In-Place (CIP).

This session will break down the fundamentals of effective CIP programs, from the chemistry and sequence of a proper cleaning cycle to practical strategies for validating and auditing your system.

We’ll explore:
• The key stages of a CIP cycle and why each one matters
• Chemical concentration, contact time, and rinse efficacy
• Equipment considerations
• Documentation and recordkeeping
• ATP and microbiological monitoring
• Common CIP problems and how to correct them
• Practical approaches to building and maintaining an effective CIP program

Whether you’re running a small craft brewery or a high-volume production facility, reliable CIP is essential for product quality, consumer safety, regulatory compliance, and operational efficiency.

Our presenter, Oliver Meinhold, brings an impressive depth of brewing and technical experience, including degrees in Brewing Science and Industrial Engineering, seven years with the VLB in Berlin, seven years as an Assistant Professor at the Berlin Institute of Technology, and 14 years in his current role as Director of the Brewery Division and consultant for Zee Company. He is also a member of the MBAA Higher Education Committee and Vice-President of the MBAA District Mid-South.

GROWING BARLEY IN A DRYING CLIMATE: Why Water, Soil, and Regenerative Farming Matter to Brewers

Where does great beer begin? Long before the brewhouse, it starts in the field.

At this year’s New Mexico Brewers Guild Technical Conference, Adam Gurtshaw of Root Shoot Malting will explore how a changing climate and increasing water risk are affecting one of brewing’s most important raw materials: barley.

Climate-driven water stress can impact barley quality, extract efficiency, flavor stability, and supply consistency — issues that ultimately make their way to the brewhouse.

So what can we do about it?

Adam will discuss how regenerative farming practices, including cover crops, reduced tillage, and diverse crop rotations, can help rebuild soil organic matter and improve water-holding capacity, making barley more resilient to drought and heat.

This session will connect the dots between soil health, water, agriculture, malting, and the beer in your glass — and explore why regenerative farming matters for the future of brewing.

SETTING UP SUCCESSFUL FERMENTATIONS

Great fermentation starts long before yeast hits the wort.

At the New Mexico Brewers Guild Technical Conference, Sean McClurg of Omega Yeast will break down how brewers can better control attenuation by understanding what happens on both the hot side and the cold side.

We’ll start in the mash, looking at how wort fermentability and sugar composition influence what a yeast strain can ultimately do. Think of it as setting up the dinner plate before inviting the yeast to the table.
From there, we’ll dive into yeast selection and management, including how different strains consume wort sugars differently and best practices for avoiding attenuation problems caused by poor yeast performance.

Then we’ll take it a step further and tackle some real-world technical challenges, including:
• Limiting ABV in NABLABs
• Targeting specific attenuation levels
• Managing attenuation in dry-hopped beers
• Troubleshooting fermentation performance

Whether you’re trying to hit a specific finishing gravity, control alcohol, or simply get more consistent fermentations, this session will give you practical tools to better understand and manage the process from mash tun to finished beer.
