A New Knight Is Born at the Pancake Breakfast

One of the wonderful things about our Knights of Columbus pancake breakfasts is that you never know when a simple conversation over breakfast might turn into something much more meaningful.

On Sunday, I had the pleasure of meeting a lovely couple, Jennifer and Norman del Rosario. As we talked, they shared that they were looking at becoming more involved at St. Kateri, with Jennifer considering becoming Catholic. During our conversation, Norman noticed all the men in the maroon shirts working around Slattery Hall and asked, “What do those guys do?”

That opened the door for me to tell him about the Knights of Columbus.

I explained that our Order was founded by Blessed Father Michael McGivney with a special concern for families who could suddenly find themselves without their primary source of support when a husband or father died. From those beginnings came the principle that remains at the heart of the Knights today: Charity—caring for families, supporting our Church, helping those in need, and standing beside one another as Catholic men.

Norman listened and then simply said, “You know what? I’d like to join the Knights.”

Well, you don't have to tell me twice! Right there at the pancake breakfast, we got Norman signed up, and I am delighted to say that Norman del Rosario is our newest Knight!

That may be one of the best things we served at breakfast that morning—not just pancakes, but fellowship, faith, and an invitation to become part of something bigger than ourselves.

Welcome to the Knights of Columbus, Norman. Vivat Jesus!

🥞 A GREAT SUNDAY AT ST. KATERI! 🥞

What a wonderful turnout we had Sunday for our Knights of Columbus Pancake Breakfast at Slattery Hall!

Following both the 8:00 a.m. and 10:30 a.m. Masses, the hall filled with parishioners, families, friends, and plenty of smiles. We served more than 400 breakfasts, and it was truly something to see so many members of our parish community gathered together around the tables.

Of course, the pancakes, eggs, sausage, and coffee are always good—but these breakfasts are really about something more. They are about fellowship and community. They give us a chance to slow down after Mass, sit together, visit with old friends, meet new ones, and simply enjoy being part of our St. Kateri family.

This is just one of the many things the Knights of Columbus Council 12489 is proud to do for our parish. Our mission isn't only about putting on events—it is about supporting our parish, bringing people together, and helping keep our Catholic community active, welcoming, and strong.

A huge thank you to Chris Mowery and all of our Brother Knights and volunteers who arrived early, cooked, served, cleaned, and worked throughout the morning. And most importantly, thank you to the hundreds of parishioners who joined us and made the morning such a tremendous success.

More than 300 breakfasts served—and even more smiles shared.

That's what parish family is all about.
Vivat Jesus! ✝️🥞

Last night was truly a special evening for Laurel and me as we joined nearly 70 fellow parishioners from St. Kateri Tekakwitha Parish for the Saint John’s Seminary fundraiser at the Cathedral of Our Lady of the Angels in Los Angeles.

Our St. Kateri group traveled together by bus to the Cathedral, while Laurel made the trip up from Long Beach to join us. The evening began with a beautiful 5:00 p.m. Mass, followed by a wonderful reception and dinner on the Cathedral plaza.

The Archdiocese of Los Angeles did an outstanding job putting together this very special event. The Cathedral plaza was beautifully decorated, the food and drinks were wonderful, and the hospitality and service made the entire evening memorable.

But what made the night especially meaningful for all of us from St. Kateri was seeing our own pastor and dear friend, Father Vaughn Winters, honored as a distinguished graduate of Saint John’s Seminary. It was a proud moment to see Father Vaughn recognized and to celebrate with so many members of our parish family who know and appreciate all that he does for St. Kateri.

There was also something wonderful about having so many of us together away from the parish—sharing dinner, conversation, laughter, friendship and, most importantly, our Catholic faith while supporting the formation of future priests.

For Laurel and me, it was a beautiful evening and one we were very fortunate to attend. But as wonderful as the Mass, dinner and celebration were, the most precious part of the evening for me was simply having my daughter by my side.

Laurel has her own life now in Long Beach, with school, friends and all the things that come with being a young woman finding her own way in the world. Yet she still makes the time to come up and spend an evening like this with her dad. I don't think she always realizes just how much those moments mean to me.

As a father, you spend so many years watching your child grow up, and somewhere along the way you realize that the time you have together is no longer something you can simply take for granted. Every dinner, every conversation, every laugh and every evening spent side by side becomes a little more precious.

So yes, I was proud to be there for Father Vaughn and grateful to share such a wonderful evening with our St. Kateri family. But I was even more grateful to look across the table and see Laurel there with me. I'm a very fortunate father to have a daughter who still wants to hang out with her dad—and I treasure every minute of it.

Congratulations to Father Vaughn on this well-deserved honor, and thank you to Saint John’s Seminary and the Archdiocese of Los Angeles for an unforgettable evening.

May God continue to bless Father Vaughn, Saint John’s Seminary, all the seminarians who have answered His call to serve, our wonderful St. Kateri parish family, and the precious time we are given with the people we love. 🙏❤️
