We are thrilled to announce that Catholic Charities of Orange County has received a generous $100,000 gift from Catholic Charities Auxiliary. This incredible contribution will help us continue our mission of serving the most vulnerable members of our community and providing hope, dignity, and support to those in need, especially our children, and New Hope Counseling Services. On this day, as part of the celebration of the 250th anniversary of the signing of the Declaration of Independence, the U.S. bishops will consecrate the United States of America to the Sacred Heart of Jesus. Catholic Charities of Orange County, celebrating 50 years of service this year, also joins the bishops in this celebration.

Today and every day, we are grateful for our partnership in serving our neighbors with compassion and hope. Together, we are putting faith into action across Orange County. Your support enables us to provide food, counseling, citizenship assistance, holiday outreach, and care for families in need. Thank you for being a vital part of this mission.

Zucchini Sauté - This vegetable side dish tastes lively and is fast to fix.

What you'll need:

Measuring cups
Measuring spoons
Cutting board
Vegetable peeler
Large skillet
Spatula or spoon

Ingredients

1 1/4 pounds Zucchini about 3 medium
1/2 teaspoon Olive Oil
1 tablespoon Oregano Dried
2 cloves Garlic finely chopped
1 teaspoon Lemon Peel grated
1 tablespoon Parmesan Cheese grated
1/4 teaspoon Black Pepper Ground

Directions

1. Cut zucchini in half crosswise, then cut each half into 4 lengthwise sticks.
2. Heat oil in a heavy nonstick skillet over medium-high heat.
3. Add oregano and garlic, and sauté for about 2 minutes.
4. Add zucchini and lemon peel, and sauté for about 3 minutes until zucchini is lightly browned.
5. Mix in Parmesan cheese and pepper. Serve warm.

On this Memorial Day, we pray for those who courageously laid down their lives for the cause of freedom. May the examples of their sacrifice inspire in us the selfless love of Your Son, our Lord Jesus Christ. Bless the families of our fallen troops, and fill their homes and their lives with Your strength and peace. In union with people of goodwill of every nation, embolden us to answer the call to work for peace and justice, and thus, seek an end to violence and conflict around the globe.
