Lyons Council 5357 was founded on November 8, 1962. It is named after Father Richard J. Lyons, who founded All Souls Catholic School in 1954. Lyons Council works closely with All Souls Parish in Sanford and Nativity Parish in Longwood, providing assistance for clergy, parish ministries, and being active members and participants in their parishes and communities.

At our October 21st meeting, our District Deputy, Dr Patrick Coggins present Council 5357 with our 2025-2025 STAR Council Award. The Award comes with a plaque for the Council as well as 3 pins. 1 each for the Grand Knight (John Frazer), the Membership Director (Larry Kennedy) and the Program Director (Nick Baggio). A special shoutout was given to our Financial Secretary (Michael Borkowski) for all the work he does tracking the STAR award requirements and sending in the proper forms to get us the credit. Thanks to the Knights for doing such a good job to get us the Award.

It’s done!!! Council 5357 voted to paint the Bingo Hall interior and to replace the carpet. I didn’t get the date the interior was painted. But, Monday 10/6, we had about a dozen Knights (and one spouse), help with removing all the tables and chairs from Bingo, and stack them in 2 trucks. Tuesday and Wednesday, the carpet company replaced the old carpet with carpet squares. Thursday about 10 of us Knights reinstalled everything. The refurbishment looks great. Shortly after that the Bingo crew was already at work gettingthings ready for Sunday Bingo. All completed without Bingo skipping a beat. Then on Sunday the 19th, our Council Chaplin did a Dedication and Blessing of the Bingo Hall.

A big thank you to all the Knights for approving this work and your help. A special thanks to the Columbus Club President Mark (and his wife Mary) for making this happen.

Come on by on Sunday to see the changes and play some Bingo.

On October 11th, Council 5357 held another Exemplification. We had 3 Men that became 3rd Degree Knights and one the moved up from 1st Drgree to 3rd Degree. Congratulations to all of them.

Saturday August 30th, the Knights had another Smokin’ Joe’s BBQ. We started at 5 am pulling out the tables and supplies. We then put our different rubs on 36 bone in pork butts, 2 Briskets, 2 Corned Beef briskets (Pastrami flavoring), 44 lbs of boneless pork (approx 15 chunks - for slicing) and 1 9lb Prime Rib. After all that meat was on the smoker, we turned out attention to the baby back ribs - 54 racks. We prepped them all with our rib rub, placed them in racks and got them in the smoker. At different points in time, we rotated the meat to try and get even smoke and temperature on everything. At the appropriate times we also pulled the meat and wrapped them in foil, then placed them back in the smoker until their ideal internal temperatures were achieved. We then cleaned up, and I believe the last of us were out of the Hall around 5-5:30 pm. Another successful BBQ is done. I tried to get pictures of each stage of the work. I ended up pulling the ribs out for wrapping and was not able to get pictures of that. We had a good group of Knights helping out and I think everyone had a good time doing it!!! Last pictures are of the Pastrami flavored corned beef brisket I purchased. I split it in half with Mom/Dad. Then I cut each half in 4 pieces. Each chunk is about 1.5lbs. I then sliced one of my chucks for eating on Labor Day. Yes, it tasted as good as it looks. I wasn’t invited to the meeting, but I got a picture of it. Maybe Neil was telling the other Knights the benefits of retiring?

Thanks everyone for the orders and helping make this happen. This is one of our money makers, which helps pay for the charity work we do.

Friday August 8th was the Back to School Bash at the All Souls Catholic School. Knights of Columbus Council 5357 were asked to provide the food for the event. Knights provided hamburgers, hotdogs, buns, plates, cups, napkins, condiments, chips and cookies for the 300 estimated participants. Knights met at the Hall and loaded two grills, food, propane, and tents onto trailer and delivered all of it to the All Souls Chapel Social Hall. School sta& and volunteers from CCW set up the Hall with serving stations. The Knights cooked the burgers and hotdogs under our tent in the Historic Chapel’s parking lot. Two grills were kept busy for over an hour. A couple of Knights shuttled the cooked meats to warming trays in the Hall. A few Knights along with the CCW and school sta&, worked the serving line in the Hall. Our District Deputy also came over to support our e&orts. We served 310 meals and ran out of burgers and hotdogs. Some that arrived later or wanted seconds could not be accommodated. Previous years we had leftovers. We will have to budget for additional meals next year. I’ve only seen one photo from the event, so apologies to anyone that didn’t make it in the photo. We then cleaned up, packed up and brought all our equipment back to the Knights Hall.
