Quick Storage Guide: For Vegetable Crops
Angelos Deltsidis, Department of Horticulture

Storage temperature is the most important factor in maintaining the quality and extending the shelf life of fresh produce. Suboptimal storage temperatures have detrimental cumulative effects on the quality of the product and contribute to food losses throughout the postharvest chain.

Pectin is a plant-based ingredient that absorbs water to create the “gelling” or “thickening” often used to make jams and jellies. However, not all pectins are alike, and the table below will help a home canner better understand why a recipe from the U.S. Department of Agriculture (USDA) or the National Center for Home Food Preservation (NCHFP) may recommend a high-methoxyl (HM) or low-methoxyl (LM) pectin.

Love preserving food, learning new skills, and sharing what you know with others? Come preserve with us!

The UC Master Food Preserver Program is looking for new volunteers for our 2027 Sonoma/Marin Counties Training Class!

You don’t need to be an experienced canner or food preserver to apply. We’re looking for curious people who enjoy learning, connecting with their community, and helping others find safe, research-based answers about home food preservation.
And we’re excited to share that our program now includes Marin County!

Interested? Our online information session is coming up September 30, so now is the time to learn more.

Research continues to show that the fiber and natural antioxidants and other
phytochemicals (plant chemicals) in apples may help prevent
chronic diseases.
