On March 31st, I went back to being vegan in honor or César Chávez and the values I strive to teach my daughter about respecting our animal relatives. Today, I watched Forks Over Knives and now I know that I will never go back to eating animal products again. Now it's about living life to the fullest and being healthy and happy enough to dance with my daughter well into my 80s. Here's to a whole foods, plant-based diet. Watch the movie and I think you will join me in toasting to A Nuestra Salud with a big bowl of ensalada verde. ¡Salud!
