The Nichi Bei Foundation is an educational and charitable nonprofit organization dedicated to keeping the Japanese American community connected, informed and empowered – primarily through a community newspaper (Nichi Bei Weekly) and Website (www.nichibei.org) as well as educational programming.

Come discover the joy of soy at the 14th Northern California Soy and Tofu Festival, to be held on Sat. June 13 at The Event Center at St. Mary's Cathedral, 1111 Gough St. in SF. Admission is $5. FREE parking at The Event Center, and a shuttle to and from the Peace Plaza.

Featuring food vendors, artisan vendors, free samples, cooking demonstrations and workshops, live performances, the SOY-FUL Youth Art Contest Gallery & raffle.

Featuring food vendors:
• Impossible Bachan Burgers by the Konko Church of SF
• Wafu Dogs by the Pine United Methodist Church
• Impossible Mapo Tofu by the Nichi Bei Cafe
• Sisig by The Laughing Monk
• Tofu ice cream by Uji Time
• Soymilk by US SoyPresso
+ many more food and artisan vendors

Entertainment by:
• Koto Yuki Band, a koto jazz fusion group
• Kulintaiko, a Filipino kulintang/taiko jazz fusion ensemble
• Eclipse, a K-Pop dance group
• Gee Yung Lion and Dragon Dance
• IWA DAIKO from Sacramento
• Wesley Ukulele Band from San Jose’s Japantown

There will be onstage cooking demonstrations:
• Yuba with Chef Henry Hsu of ORAMASAMA
• Sisig with Chef Reina Montenegro of The Laughing Monk
• Tofu Tiramisu with Okara Ladyfingers, hojicha, and kinako with Tamako Park-Li
• Natto with Kota Morikawa

Cooking Workshops:
• Soy/Tofu Ice Cream Parfaits with Tamako Park-Li ($50)
• Tofu-making workshop with Henry Hsu ($75)

Hakouya offers miso soup bases and their famous dressing, as well as white, red, barley and chickpea miso. Along with the miso products, Diaz said customers also buy her probiotic “Umami Soy Sauce,” along with a line of amazake (a Japanese drink made of fermented rice).

Sato produces 500 to 600 tofu bricks and 50 to 75 gallons of soymilk every day, “using 180 to 200 pounds of soybeans, a tiring five-hour-long process that’s overseen by Sato and his brother, Kurato.”

Some customers eat the tofu plain with a spoon before they make it home. Sato eats his tofu with “jam — any kind. Or marmalade, honey, or strawberries or peaches,” PBS SoCal reported. He also crumbles his tofu over pasta.
