Pulled out an 18 month old raspberry vanilla mead with buckwheat honey, and this barrel is getting a third use by refilling with a natural wine. Whole cluster fermentation of cab, syrah, sangiovese, and merlot for 90 days, most will continue to age in kegs, and the skins will be refermented on apple juice and possibly some lime blossom honey.

Mix of cab, syrah, grenache, merlot, and sangiovese. What won't fit in a 55 gallon fermenter will go in smaller batches for cider, mead, and lambic.
