Afternoon lunch
Chickpea pasta
Homemade marinara sauce that I made last night which I changed up the recipe
10 Roma tomatoes
I use 12 garlic cloves peeled
And one bunch of basil
Teaspoon of oregano and parsley
Set my oven to 375 cut up the Roma tomatoes, drizzle olive on the tomatoes and garlic, and let’s cook until soft
Take them out and purée with the fresh basil
Add some Himalayan salt for additional taste

I like mushrooms because of the texture and how they taste I usually cut one cup then add to the pasta with marinara and shred some fresh Parmesan cheese on top and it comes out really good

The drink is some hibiscus tea

While I am leaning more toward vegetarian, I still do 10% shrimp, fish and very lean meats. Once in a while this shrimp ceviche came out amazing
Low carbs and high protein
1 lb of shrimp - I like fresh United States do not get farm raised from other countries or from the United States farm raised is the worst
One red onion, finely diced
One cup of chopped cilantro
One cup of lime juice
2 finely chopped jalapeños
2 finely chopped Roma tomatoes
Himalayan salt to taste

Devain, the shrimp after cleaning them cut into desired pieces and place in the lemon juice for 30 minutes
While they are soaking cut up all the vegetables and place in a bowl once the shrimp is ready after 30 minutes place in bowl mix to taste and enjoy
