🥬 EAT LOCAL: Cabbage Edition

It’s inexpensive, simple, and locally in season… it’s cabbage! And I’m totally obsessed.

But before you scrunch your nose and scroll, hear me out:
🥬 you can ferment it and make an incredible sauerkraut with tons of natural probiotic benefits
🥬 you can roast it or char it on the grill and top with lemon juice, olive oil, and Parmesan
🥬 shred and add to your stir fry, top on your tacos, or include in soups for extra fiber
🥬 braise on your stovetop and caramelize to bring out the natural sugars
🥬 🇵🇱 go full Polish and make a cabbage and noodles dish (known as halushki) - my personal fav

And it’s not just versatile, nutritionally it packs a punch! 🥊
One cup of raw cabbage contains approx:
✅ Only 22 calories
✅ 54% of your daily Vitamin C needs
✅ 2 grams of fiber
✅ Vitamin K for bone health
✅ Folate and B vitamins for cell growth
✅ Powerful antioxidants that help fight inflammation

Great night in Elmer at Lost Elephant Brewing Company with the Farmers, Makers, and Bakers of South Jersey ❤️

Thank you for the support and turnout last night ❤️- this initiative is larger than a Market (and even much larger than SJP). This is a movement to change local culture by highlighting local farmers and foods, artisans, and small businesses to grow our larger community and connection to the land.

We can’t protect what we dont love 💕

🐖 Pasture-raised vs. Conventional pork

When we talk about shopping from local farms, it’s not just about supporting a local economy (although that is a major benefit) - there are nutritional benefits to the local food you buy as well!

Pasture-raised animals have a diverse diet and graze in open sunshine ☀️(Vitamin D). These variables can affect meat color, texture, marbling, and flavor!

In South Jersey, there are so many ranches where you can buy local! Shop around the region, understand where your food comes from, and connect with your local farmer. Most farmers have information on their websites related to all of these variables, so be sure to check them out!
