As we take our winter rest we are reflecting on our 2025 accomplishments. Do you know someone who could benefit from our ministry? When people ask us where we “find” our students we say, “God sends them!”

We have been under a layer of ice and snow for two weeks, with temps mostly below freezing that whole time and lows in the lower single digits. It is a time for the farm to rest while we keep the chickens safe and warm in the greenhouses. We are hoping the extended cold will kill off bugs and other pests! Before too long, though, we’ll be planting in the greenhouses, starting seeds, and gathering the first eggs from our newest flock.

What are you looking forward to in the spring?

The 9th Annual Sweet Potato Festival is in 5 weeks! In anticipation, here is a new sweet potato recipe we just tried and it is amazing! We are actually using up the last of last year's sweet potatoes which were kept in a cool, dark corner of the basement. They lose some moisture, but that makes them roast up beautifully!

As the name implies, these sweet potatoes melt right in your mouth. After browning in a hot oven, thick slices of sweet potato simmer in broth and soak up the flavors of maple syrup and lemon. This simple dish is great alongside roasted chicken or pork and makes a great Thanksgiving side dish.

Morgan Snead is our third graduate this summer! She is now at Montana State University in Bozeman studying agriculture. We miss her expertise with plants and animals, as she was our “chicken whisperer” and knew how to treat the white leghorn hens for bumblefoot! She was an excellent role model for our younger workers for work ethic, trust worthiness, and integrity. She is sorely missed!
