It's Salad Sunday, and we're enjoying this fresh, crunchy cucumber salad.

Thinly sliced English cucumbers, red onion, fresh dill, chives, and a sweet tangy vinegar dressing come together to make the easiest side dish for cookouts, beach dinners, and hot nights ahead.

Pro tip: A 20-minute chill time will help the cucumbers soak up all that flavor while staying crisp and refreshing.

Not all kitchen waste needs to end up in the trash. In fact, many everyday items from your kitchen can actually be composted and turned into something valuable for the environment!

Composting is a simple but powerful way to reduce environmental waste. Instead of contributing to landfill buildup, kitchen scraps are given a second life that benefits the earth. This process also helps reduce methane emissions from food waste in landfills and supports a more sustainable food system overall.

By making small changes at home, we can all play a part in reducing food waste.

Recently, our team joined community members at Roger Williams Middle School to celebrate an important milestone for Providence students and families.

The ribbon-cutting event marked the continued expansion of our Feed the Future school pantries across Providence and a shared commitment to making healthy, reliable food more accessible for local students.

We’re grateful to our incredible partners at Gil's Appliances, Rhode Island Department of Education - RIDE, and CVS Health for helping make this possible and for their continued commitment to supporting Rhode Island families.

World Hunger Day is a reminder that food insecurity isn’t a distant issue, it’s happening right here in Rhode Island. In the last 12 months, 44% of households in our state experienced food insecurity.

That means nearly half of our neighbors, coworkers, friends, and families have faced uncertainty about where their next meal would come from.

Food insecurity is not just about hunger. It’s about stability, health, and opportunity. Supporting local food programs, reducing waste, and strengthening community resources all play a role in making sure everyone in Rhode Island has access.
