Thanksgiving Rolls🍞🍞🍞

-If you've never attempted to make rolls from home, try this simple, no-fuss recipe. You can make soft, buttery dinner rolls for Thanksgiving dinner or any other time of the year with just a few basic ingredients and a little hands-off time.

Ingredients:

1 c. whole milk
2 1/4 tsp. dry active yeast (from a 1 1/4-oz. packet)
2 tbsp. granulated sugar, divided
1 large egg, room temperature
1 1/2 tsp. kosher salt
6 tbsp. unsalted butter, melted, divided
3 1/4 c. (390 g.) all-purpose or bread flour, divided
Neutral oil or cooking spray, for greasing
Flaky sea salt

Directions:

-In a small heatproof bowl, microwave milk in 30-second increments until an instant-read thermometer registers 110° or until warm to the touch. Pour into the large bowl of a stand mixer fitted with the dough hook. Add yeast and 1 tablespoon granulated sugar and whisk to combine. Let sit until foamy, about 5 minutes.

-Add egg, salt, 4 tablespoons butter, and remaining 1 tablespoon granulated sugar. Beat on medium speed until well combined, about 30 seconds. Add 1 cup flour and beat on medium speed until combined, about 30 seconds. Scrape down sides of bowl with a rubber spatula and add remaining 2 1/4 cups flour. Beat on medium speed until dough comes together and pulls away from sides of bowl, about 1 minute. Continue to beat, scraping dough hook when needed, until smoother and more elastic, about 3 minutes more.

-Lightly grease a large bowl with oil. Scrape dough into bowl and toss to coat in oil. Cover bowl with plastic wrap or a clean kitchen towel. Let rise in a warm place until doubled in size, about 1 hour.

-Grease a 13"-by-9" baking pan with oil or cooking spray. Punch down risen dough. Divide into 12 pieces (about 70 grams each). Shape each piece into smooth round balls and arrange in prepared pan. Cover with plastic wrap or clean kitchen towel. Let rise in a warm place until puffed, about 1 hour.

-Arrange a rack in lower third of oven; preheat to 350°. Bake rolls, rotating halfway through and tenting with foil if browning too quickly, until tops are golden brown, 25 to 30 minutes.

-Brush rolls with remaining 2 tablespoons butter and sprinkle with sea salt.

Ricotta Whey and Barley Bread❤️❤️

-My most recent barley and wheat flour sandwich loaf, which is now a family favorite, contains some of it. Making ricotta is worthwhile merely to have the whey on hand for this recipe because of the spectacular results.

Ingredients:

2 1/4 teaspoons active dry yeast
43 grams warm water
Pinch of sugar
235 grams ricotta whey
2 tablespoons olive oil, plus a bit more for rising and baking
2 tablespoons warmed honey
2 teaspoons regular molasses
320 grams bread flour plus a tablespoon or two for kneading, if necessary
100 grams barley flour
23 grams toasted wheat germ
19 grams rye flour
1 teaspoon salt
1/8 teaspoon baking soda

Directions:

-Proof the yeast in the water with a pinch of sugar.

-In a large bowl, mix the whey with the oil, honey, and molasses, and 1 cup of the bread flour. Stir well, all in the same direction, to make a thick paste.

-Add the proofed yeast mixture and stir well to combine. Then add all of the other ingredients, holding back a few tablespoons of the bread flour to use if necessary in kneading. Stir it as much as you can, then turn it out onto your work surface.

-Knead the bread for 3 or 4 minutes to combine all of the ingredients. Let it rest for about 10 minutes.

-Knead again for 8 to 10 minutes, or until the dough is smooth, supple and elastic. If the dough is very sticky while kneading, add flour only a teaspoon or two at a time. You shouldn’t need more than a tablespoon of additional flour at most, but don’t worry if you do—just make sure you don’t add too much.

-Wash your mixing bowl and dry it, then drizzle a teaspoon or so of olive oil into the bowl, put the ball of dough on it, and flip it over to coat.

-Cover the bowl with a very damp tea towel and allow to rise until doubled in size, about 1 1/2 hours.

-Turn the dough out onto your work surface and press it down gently into a 2-inch-thick rectangle, pushing out the trapped gasses. Fold it into thirds, then pinch the ends and the long seam, pulling the dough lengthwise to shape the loaf.

-Set the shaped dough in an oiled or parchment-lined loaf pan. Coat generously with olive oil and allow to rise for 30 to 40 minutes. You want it to increase in size by about two-thirds.

-Preheat oven to 350° F.

-Do not allow the dough to rise too much, or it will be too airy for use in making sandwiches. Watch it carefully, and have your oven hot so you can put the dough in as soon as it’s ready.

-Slash the top and bake for 50 to 55 minutes, checking after about 30 minutes and tenting lightly with foil if it seems to be darkening too quickly.

-Cool on a wire rack and allow it to sit for at least an hour before slicing. Enjoy!

Cheddar soda bread with spring onion butter❤️❤️

-Zero yeast? No issue! Make some cheesy Irish soda bread and top it with tons of homemade spring onion butter for lunch.

Ingredients:

150g plain flour, plus extra for dusting
150g wholemeal flour
1 tsp bicarbonate of soda
100g mature cheddar, grated
250ml buttermilk

SPRING ONION BUTTER:

4 spring onions, finely chopped
100g salted butter, at room temperature

Directions:

-Heat the oven to 200C/fan 180C/gas 6. Mix the flours, bicarb and 1½ tsp salt in a bowl. Add the cheese, keeping a small handful back, and toss together. Add enough buttermilk to make a soft but not too sticky dough.

-Knead briefly then form into a ball. Put on a floured baking sheet and slash a cross on top. Sprinkle with the rest of the cheese. Bake for 30-40 minutes or until the loaf sounds hollow when you tap the bottom. Meanwhile, mix the butter and spring onions together, and tip into a serving dish.

-Serve the soda bread just-warm, with the spring onion butter on the side.
