PUEBLO CHILE TO BE FEATURED ON STATE AMERICAN INNOVATION COIN - Colorado Gov Jared Polis just announced ex that Pueblo chile will be featured on Colorado’s 2028 American Innovation Coin.
The US Mint American Coin program celebrates innovation across the country each year, and this year, for Colorado it’s about Pueblo Chile, a food the Gov has long promoted.
“The Pueblo Chile represents Colorado’s history, heritage and strong agriculture roots,” he said in a Thursday press release. “The Pueblo Chile is simply the very best Chile that exists and is a key ingredient in dishes across the state and country.”
He went on to share the history, saying the Pueblo Chile was created by Dr. Mike Bartolo through selective breeding in 1994.
A final design for the 2028 coin will be selected by the Secretary of the Treasury.
