Registration is open for the Fall 2026 term of Cider & Perry Production - A Foundation!

Join professional cidermakers, aspiring producers, and industry experts from around the world for our flagship 12-week online program, running August 27 through November 12.

Whether you’re launching a commercial cidery, expanding your production knowledge, or building a stronger scientific foundation, this course covers the essentials - from apples and fermentation to sensory evaluation, quality, and production best practices.

This online course allows you to participate from wherever you are.

Looking for your next adventure in professional cidermaking?

Our friends at are seeking a Head of Cider Production to join their team in the renowned fruit-growing region of Hardanger, Western Norway.

This full-time position is ideal for an experienced cidermaker, winemaker, brewer, or fermentation professional who is ready to lead all aspects of cider production - from fruit intake and pressing through fermentation, cellar operations, blending, bottling, and quality control.

Located among Norway’s spectacular fjords and orchards, Alde combines traditional orchard cultivation with modern cider production to create award-winning ciders that express the character of the region.

🍏 Responsibilities include:
• Lead the complete cider production process
• Manage fermentation, blending, and cellar operations
• Oversee bottling and production equipment
• Collaborate with the orchard and logistics teams
• Contribute to new product development
• Represent the cidery at industry events

What they’re looking for:
✔ Experience in cider, wine, brewing, or other fermentation industries, formal education preferred (👀 hello Cider Institute alumni!)
✔ Strong technical production and quality assurance skills

Together we explored modern dry, fruited, botanical, and traditional tannic ciders through guided sensory tasting and discussion, highlighting the ingredients, production choices, and characteristics that define each style. Heading to the Craft Brewers Conference? Join us for Understanding Cider Styles Through Guided Tasting 🍎🍻

Cider is more than just an alternative to beer - it’s a category with its own styles, structure, and quality markers.

Alongside Christine Walter and Marcio Buffalo the Cider Institute will lead a guided tasting built for brewers. We’ll taste four core styles - modern, traditional, fruited, and botanical - and dig into how they’re made, how to evaluate quality, and what to consider when producing the styles that fit your goals.

We’re also excited to partner with the PA Cider Guild Ploughman Cider ANXO Cider Stowe Cider Big Hill Ciderworks and Brother Monk Ciderworks for the ciders featured in the session.

✨ Bonus: Cider Party Tuesday night at Pip’s Cider Bar (5–8pm) - come taste, connect, and keep the conversation going.
