After 55 years, The Diabetes Education and Research Center will be closing its doors and this will be our last newsletter. We are incredibly grateful for the support of our community, donors, and volunteers who have made our work possible. While this decision was difficult, we are confident that our mission will continue to be carried out by other dedicated organizations.

Slow Cooker (Diabetic Friendly) Corned Beef
This Diabetic friendly Corned Beef recipe is super easy to make in your Slow Cooker. The perfect meal to celebrate St-Patrick's Day.

INGREDIENTS

3 large Carrots, cut into chunks
1 cup Celery, chopped
½ teaspoon Ground Black Pepper
1 cup Water
2-3 lbs flat-cut beef brisket, trimmed of fat with seasoning packet
1 large Yellow Onion, cut into pieces
1 cabbage about 2 pounds, cut into large wedges
4 medium Russet Potatoes, peeled and chunked or 6-8 small red potatoes quartered
12 ounces of beer (preferably a lager)
