Who we are
The Tequila Interchange Project (TIP) is a non-profit organization and consumer advocacy group for agave distilled spirits comprised of bartenders, consultants, educators, researchers, consumers and tequila enthusiasts. Our organization advocates the preservation of sustainable, traditional and quality practices in the industries of agave distilled spirits. In light of concerning trends

that are currently becoming mainstays in the production of agave distillates, TIP seeks to place a renewed emphasis on the importance of preserving the great heritage of agave distillation in Mexico. Agave is a culture. Mezcales are the spirit of Mexico. The traditions that make them distinct are centuries old. From cultivation, fermentation, and distillation each step is both an art and a science. Agave fibers weave generation to generation and their sugars bind the story of Mexico to its people.

An updated norma for Mezcal is currently being drafted for the Mezcal Denomination of Origin. This regulatory framework is what defines what can and cannot be called mezcal as well as what practices are allowed under the D.O. We will be linking the current draft on our website (its only available in Spanish but you can feed it into your favorite translator. (Link in bio).

As always, TIP will be discussing problems that we see and changes we feel would benefit the category and make it fairer for small, traditional producers. Please follow us to keep up to date on the latest happenings.

What’s wrong with that? Cheap margs and banitas for everyone!

In reality, low agave prices cause a litany of problems, both economic and environmental. Remarkably, the Tequila and now mezcal industries still have not figured out how to avoid the disastrous boom-bust cycle of the agave spirits industry. With prices now near record lows after the record highs 💵 of the pandemic era, many agave growers are now again leaving their fields to rot rather than pay higher cost of harvesting near-worthless agave. 

Not only does this cause financial ruin for many agave growers, it also affects the thousands of jimadores and other field workers who survive by working the agave fields. 

Environmentally, thousands of acres of rotting agave can also exacerbate health risks for the already vulnerable monocrops of blue weber and espadín planted during the boom. The boom also decreases healthy biodiversity, as growers have ripped out fields of other crops including cultural staples like beans and squash. This lack of diversity in-turn negatively impacts pollinator diversity in these regions.

Through the generosity of the Agave Heritage Festival in Tucson, Arizona, we are able to sell these limited-edition posters commemorating the 16th annual festival! A collaboration with artist and brand owner Alex White of REZPIRAL Agave Spirits, this limited run of posters was inspired by local scenic landmark Gates Pass, and the importance of water to agave spirits and the vitality of life in the borderlands. Each poster is signed and numbered by Alex.

Limited to only 50 pieces, these posters are collectors items. Printed in Tucson, AZ by proudly unionized print shop The Gloo Factory. 100% of the proceeds from the sale of each poster goes directly to funding TIP’s work of biocultural conservation in agave spirits.

Inspired by the label of late 19th-century “Legitmo” bacanora brand bottled by Tucson liquor rectifier and importer, Julius Goldbaum, this poster is a window into the connection between of agave and the Southwest border region.

We are very excited to announce 📣 that the first post from , our 2026 Writer-in-Residence is now live! In her inaugural piece, Carmen López Torres takes time to introduce herself to our audience and explore her own, deeply personal connection with agave. 

Made possible through the generosity of the Innovation Fund, this program allowed us to select one hospitality/beverage professional who has wanted to explore agave culture through the written word. As part of this program, Carmen will work with professional editors who have volunteered their time to help her craft bi-monthly pieces for TIP. TIP is excited to launch our first-ever Professional Development Program. This new program focuses on three different tracks, Production/Ecology, Writing, and Hospitality, for applicants to explore in an effort to deepen their connection with agave spirits. The selection committee will select one applicant for each track based on written applications and interviews.

This program is only made possible through the incredible relationships that TIP has been able to foster throughout our existence. We will be partnering with incredible projects like .murzielaga.mezcal, , and . Established professionals like Paul Clarke , Emma Janzen , Rachel DelRocco, , and Ferron Salnicker are graciously donating their time to help the selected applicants hone their skills.

Through the generosity of the Slow Food Negroni Week Innovation Fund, we have been able to provide free travel, lodging, and compensation for our selected applicants, allowing them to explore these professional paths without sacrificing their day-to-day livelihoods. “When agave spirits are produced responsibly, they can sustain livelihoods and preserve generational traditions”

We want to take a moment to introduce Marissa Gatta, Senior Beverage Director of Westbound and Tap & Bottle in Tucson, Arizona, and winner of the Tequila Interchange Project sponsorship for the Zinacantan Residency Program. Through the generosity of the Slow Food Negroni Week Innovation Fund, TIP's new Professional Development Program will cover Marissa's travel and missed wages as she participates in a nine-day immersive experience of staying on-site with the team from Zinacantan. This residency provides a holistic view of how the project approaches their natural resource management, agave cultivation, mezcal produciton and how they see themselves as one part of the larger ecosystem and work to create a more sustainable future for the agave spirits community.

Through the Slow Food Negroni Week Innovation Fund, TIP launched our first-ever Professional Development program. Consisting of three separate tracks, this program seeks to foster deeper engagement between members of the hospitality/beverage industries and the agave spirits community. Eligibility for this Production/Ecology track was limited to participants of the Zinacantan Residency Program. However, we just opened applications for our 2026 TIP Writer-in-Residence program, featuring professional mentorship and collaboration with folks like writers , , and . We also launched applications for our Hospitality Residency Program with , providing one applicant the opportunity to stage and train with the team from one of the world's leading agave bars and their sister bars & .
