DID YOU KNOW⦠you donāt have to blanch tomatoes to freeze them?
If your garden is producing faster than you can keep up, whole tomatoes can be washed, dried, cored and frozenāskins and all. No boiling water. No ice bath. No peeling marathon.
When youāre ready to make sauce, soup, chili or salsa later, let the frozen tomato thaw slightly and the skin will usually slip right off.
There is one tradeoff: freezing breaks down the tomatoās structure, so thawed tomatoes wonāt have that firm, fresh-from-the-garden texture. But for anything youāre going to cook anyway, that usually doesnāt matter one bit.
Itās an easy way to save that summer harvest until you actually have time to deal with it. ā¤ļøš
Divine Tomato tip: Freeze them individually on a baking sheet first, then transfer them to freezer bags or containers. That way you can grab one tomato or twenty instead of dealing with one giant frozen tomato brick. š
