Did you know? There's an active community commercial kitchen working group that's plugging away to find space for local entrepreneurs to start their food businesses in Pelican Rapids. In fact, they want to know exactly what equipment is needed so that we can keep moving this project forward.

Help make a community commercial kitchen a reality in Pelican Rapids!

Your help is needed to plan, develop, and open a commercial kitchen to address the urgent need of food entrepreneurs and support cottage food producers, farmers, gardeners, and caterers.

Become part of the friendship kitchen working group to help us reach our goal of opening the kitchen by 2025. Applications to join this fun volunteer opportunity are open through December 16th.

As many of you know, Ellie Litzinger has been our Minnesota GreenCorps Member who has served as coordinator of Pelican Market this season and working with the Local Foods, Local Places Initiative in Pelican Rapids. Ellie’s 11-month-long service is coming to an end on August 16th, just a week away. While the next chapter of her life involves serving GreenCorps for a second year, it won't be in Pelican Rapids, but with the Robbinsdale Area School District in the northwestern suburbs of the Twin Cities, developing an organics recycling program for the school district. Let’s thank Ellie for her work making Pelican a better place.

Personal note from Ellie: I will miss everybody that I've worked with and befriended over this past year. Furthermore, this isn't goodbye forever. I do want to visit Pelican Rapids and this corner of the state again in the future.

We’d like to thank PartnerSHIP 4 Health, , Larry's Super Market, those who visited our Smoothie Bike at the International Friendship Festival, and the members of our community for donating $2,100 for our feasibility study so far. We still have $2,900 more to raise, and we highly appreciate any donations! All funds will contribute to paying for a commercial kitchen feasibility study to give Pelican Rapids residents increase avenues to food entrepreneurship and diversify our economy in Pelican Rapids.

Are you an aspiring food entrepreneur? Do you want to sell your food products in grocery stores? Have you ever thought about opening your own food business? Then we need your help!

The Local Foods, Local Places committee is currently conducting a feasibility study to determine the best location and the demand for a commercial kitchen in Pelican Rapids. The goal of this commercial kitchen is to foster food entrepreneurship in our community. However, we still need to raise $3,950 to pay the consultants we are working with for the study. That would be 100 people donating $39.50. Every dollar counts, so any amount you are able to donate is highly appreciated.

We hope to meet our fundraising goal by Thursday, June 30th. If you or someone you know would like to make a contribution, please make checks payable to the Friends of the Pelican Rapids Library, as they are acting as the fiscal host for this study on behalf of the LFLP Steering Committee.
