If you've ever walked away from our pantry with tomatoes and had no clue what to do with them, here's an idea...PASTA SAUCE 😋. Here is a simple recipe for pasta sauce that you might like. Let me know if it worked for you.
Simple Fresh Tomato Pasta Sauce
Ingredients
6–8 ripe red tomatoes
2 tablespoons olive oil
3 cloves garlic, minced
½ small onion, finely chopped
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
½ teaspoon sugar (optional, if the tomatoes are acidic)
2 tablespoons tomato paste (optional, for a thicker, richer sauce)
Fresh basil or parsley (optional)
Directions:
Prepare the tomatoes: Cut the tomatoes into chunks. You can remove the seeds if you prefer a smoother sauce, but you don't have to.
Sauté: Heat olive oil in a large pot over medium heat. Add the onion and cook for about 3–4 minutes. Add the garlic and cook for another 30 seconds.
Add tomatoes: Add the chopped tomatoes, salt, pepper, Italian seasoning, and tomato paste if using.
Simmer: Bring everything to a gentle boil, then reduce the heat. Cover partially and simmer for 25–35 minutes, stirring occasionally.
Blend: For a smooth sauce, use an immersion blender or regular blender. For a chunky sauce, simply mash the tomatoes with a spoon or potato masher.
Taste: Add the sugar if needed and adjust the salt and pepper.
Finish: Stir in a little fresh basil or parsley before serving.
