Looking for a fresh, easy dinner idea to enjoy on those warm, laid-back evenings? Try these Grilled Chicken Kabobs with Vegetables from Lena’s Kitchen! Juicy, taco-seasoned chicken, sweet corn, and a hint of jalapeno come together for a vibrant, smoky meal that’s perfect for family nights on the patio. Fire up the grill and make the most of summer—your taste buds will thank you!

Ingredients:
Grilled Chicken Kabobs
• 4 chicken thighs, boneless and skinless cut into 1 1/2-inch pieces
• 2 corn on the cob, cleaned and cut into 1-inch pieces
• 4 jalapeno peppers, cut into 1-inch pieces and seeded
• ½ small red onion, cut into 2-inch pieces
• 5 tbsp avocado oil, or use any other high heat oil
• 1 ½ tbsp taco seasoning
• ½ tsp kosher salt
Cilantro Lime Sauce
• ¼ cup sour cream
• 2 tbsp cilantro, finely chopped, plus 2 tbsp more for garnish
• ½ small lime, juiced and zested
• 1 tbsp Tajin seasoning
• ¼ cup cotija cheese, crumbled

Instructions:
1. Preheat the grill to 400ºF.
2. Combine 4 tablespoons of avocado oil and taco seasoning in a bowl. Add chicken and toss to coat. Let it sit and marinate in the fridge while you prep the veggies.
3. Using a skewer sticks, thread the chicken, corn pieces, red onions, and jalapeno peppers, alternating until filled. Add the remaining 1 tablespoon of avocado oil in the same bowl the chicken was in and lightly brush the corn, onions, and jalapeno pieces. Sprinkle all skewers with salt on both sides.
4. Grill over medium heat for 8-10 minutes, flipping halfway. A meat thermometer should read 165ºF for the chicken to be fully cooked.
5. While the chicken is cooking, make the cilantro lime sauce by combining the sour cream, 1 tablespoon of Tajin seasoning, lime zest and juice, cilantro in a small bowl. Mix well.
6. Place the skewers on a serving plate. Drizzle the sauce on top, as well as ½ teaspoon of Tajin seasoning, extra cilantro, and cotija cheese.

Note: Soak the skewers - if you’re making these with bamboo or wood skewers, make sure to soak them in water for at least 30 minutes before assembly.

☀️ Summer is here and so is the heat! Stay cool and protect your loved ones—furry friends included—with these essential tips from the American Red Cross and ASPCA.

You need to drink enough water to prevent heat illness. An average person needs to drink about 3/4 of a gallon of water daily. Everyone’s needs may vary.

You can check that you are getting enough water by noting your urine color. Dark yellow may indicate you are not drinking enough.

Avoid sugary, caffeinated and alcoholic drinks.

If you are sweating a lot, combine water with snacks or a sports drink to replace the salt and minerals you lose in sweat.

Talk to your doctor about how to prepare if you have a medical condition or are taking medicines.

Taking a cool shower or bath or moving to an air-conditioned place is a much better way to cool off than electric fans.

If you do not have air conditioning or if there is a power outage, find locations where you can stay cool. For example, a public library, or a shopping mall.

Pets can get dehydrated quickly, so give them plenty of fresh, clean water.

Make sure your pets have a shady place to get out of the sun, be careful not to over-exercise them, and keep them indoors when it’s extremely hot.

When the temperature is very high, don’t let your dog linger on hot asphalt. Being so close to the ground, your pooch’s body can heat up quickly, and sensitive paw pads can burn. Keep walks during these times to a minimum.

According to the CDC, visits to emergency rooms for tick bites are higher than normal in many parts of the country right now. In all regions except the South Central United States, weekly rates of ER visits for tick bites are the highest for this time of year since 2017.

"Tick season is here and these tiny biters can make you seriously sick. The good news is you have options to help prevent tick bites when you spend time outdoors: You can wear EPA-registered insect repellent and permethrin-treated clothing, do tick checks, and remove attached ticks as quickly as possible. These simple steps can go a long way in protecting you and your family from diseases spread by ticks. And if you develop a rash or fever in the days to weeks after a bite, or after being in an area with ticks, seek medical care promptly." - Alison Hinckley, PhD, epidemiologist and Lyme disease expert with CDC's Division of Vector-Borne Diseases

Summer is here, and it’s the perfect time to let fresh produce shine in your kitchen! Looking for a simple, healthy dinner that’s bursting with flavor? Try this Salmon with Basil Sauce and Tomato Salad from Pinch of Yum—easy to make, delicious, and packed with nutrients. Taste the season and support your wellness goals!

Ingredients:
Spice-Rubbed Salmon:
• 1 teaspoon paprika
• 1/2 teaspoon garlic powder
• 1/2 teaspoon onion powder
• 1/2 teaspoon coarse kosher salt
• 1 teaspoon granulated sugar
• 1 tablespoon olive oil
• 1 lb. salmon filet, cut into 2–3 pieces
Basil Sauce:
• 1/2 cup packed fresh basil
• 1 small bunch of fresh chives
• 1 teaspoon dried oregano, optional
• 1 clove garlic
• 1/2 cup mayo (more as needed to keep it creamy)
• 1/4 cup grated Parmesan cheese
• 1–2 tablespoons lemon juice
• small pinch of salt, to taste
Tomato Salad:
• 1 1/2 cup halved cherry tomatoes
• 2 ear sweet corn, cut off the cob
• 1–2 cups fresh spinach or spring greens
• 1 tablespoon olive oil
• 2 tablespoons minced chives or parsley
• salt, pepper, and garlic powder to taste
• 2 cups cooked rice or grains for serving (I use precooked to make it easy)

Instructions:
Prep: Prep the tomato salad.
Make the basil sauce: Blend the basil sauce ingredients until almost completely smooth, with just a few flecks remaining.
Prep the salmon: Preheat the oven to 425 degrees. Mix the spices in a small bowl and stir in the olive oil. Coat the salmon with the spice paste.
Bake the salmon: Bake on a parchment-lined baking sheet for 9-12 minutes, or until 135 degrees in the thickest part. (It’s all personal preference, but this is the doneness that we like best – it’s a medium-well done salmon.)
Assemble the meal: Plate the salmon over the rice, serve with salad, and spoon the sauce over the top. Season with salt and pepper.
