Running a small restaurant means riding a daily rollercoaster. Some days we get glowing five-star praise, and other days we take tough, critical feedback from customers. But every bit of that stress—the good, the bad, and the exhausting—fades into the background the moment our service men and women walk through the door. Being able to provide a hot, comforting meal to the people who protect our country gives our kitchen its true purpose. Their sacrifice outweighs any bad day we could ever have, and feeding them makes every single slice of the restaurant life completely worth it.
