Our Farm-to-Table Dinner Under the Stars on Thursday, August 20th is almost here, and we're so excited to share the spectacular menu Chef Jason Ungar has created exclusively for this special evening.

From the freshest ingredients harvested right here at Cropsey Community Farm to beautifully paired wines and an unforgettable outdoor setting, every course has been thoughtfully designed to celebrate the very best of the season.

We're delighted to welcome Chef Jason back to the farm for another memorable evening of exceptional food, community, and summer magic under the stars.

This year's Twilight Dinner theme is Community—celebrating the people and partnerships that remind us our greatest accomplishments are never achieved alone. Every field we plant, every student we inspire, and every opportunity we create is the result of individuals who believe in working together to grow something bigger than themselves.

We are proud to honor Adam Berman, Julie Sadowski, Jenna Nazario, and Jenna & Robert Gruffi for the unique ways they have strengthened our mission, expanded educational opportunities, fostered meaningful partnerships, and helped build a more connected and inclusive community. Their dedication embodies the spirit of this year's celebration, and we look forward to recognizing their remarkable contributions.

🐔 One of the highlights of every week at camp is spending time with our feathered friends!

Our campers take an active role in caring for the chickens every single day. They collect fresh eggs, make sure they have clean water, deliver healthy treats, and even help create enrichment activities to keep our hens happy and curious.

🍉 Watermelon is one of our chickens' favorite summer snacks! Not only do chickens love it, but watermelon is packed with water to help keep them hydrated on hot days. It's also a source of vitamins A and C, making it a refreshing and nutritious treat.

Our campers have also built screens and planted cover crops beneath them. As the plants grow, the chickens will peck through the screens, enjoying fresh greens while the roots stay protected and continue growing. It's a wonderful example of working with nature to create healthier, more enriching spaces for our animals.

These daily moments are about so much more than caring for chickens. They teach responsibility, patience, empathy, observation, and the importance of stewardship. When children develop a connection with animals and the natural world, they gain confidence, compassion, and a deeper understanding of how every living thing plays a role in a healthy ecosystem.

It's no surprise that our animals are one of the very favorite parts of camp—they're incredible teachers. 💚

🍅 **A Recipe... and a Little Piece of My Childhood.** ❤️

Some recipes aren't written in cookbooks—they're written in memories.

Every weekend during tomato season, my grandmother would make the simplest salad: fresh garden tomatoes, sliced onions, olive oil, balsamic vinegar, salt, and pepper. That was it.

No lettuce. No fancy ingredients. Just tomatoes picked at their peak and shared around the family table.

Over the years, I've added my own little twist...

🍑 **Grilled peaches.**

Because when peaches and tomatoes are both in season...why not?

The sweetness of the peaches, the richness of heirloom tomatoes, and the tang of balsamic create one of my favorite summer dishes. And if you're feeling a little indulgent...

✨ Add burrata.

Trust me.

This recipe reminds me that the best meals don't have to be complicated. They simply begin with fresh ingredients, people you love, and a story worth sharing.
