What’s in Season?!

“October marks the changing of the seasons, i.e pulling out all of your sweaters, cleaning your fridge and grabbing the blender for soup season. Now what, exactly should you be re-stocking your kitchen with? Here’s a list of fruits and veg that are hitting their peak (and finishing their harvests!) this month in New York.

Fruits: Apples, Grapes, Pears, Raspberry, Watermelon
Veg: Dry Beans,Lima Beans, Snap Beans, Beets, Broccoli, Brussels Sprouts, Cabbage, Carrots, Cauliflower, Celery, Collard Greens, Corn, Cucumbers, Eggplant, Herbs, Kale, Leeks, Lettuce (ends in late Oct.), Mustard Greens, Onions, Parsnips, Peas, Peppers (ends middle of Oct.), Potatoes, Pumpkins, Spinach (ends in late Oct.), Summer Squash (ends middle of Oct.), Winter Squash, Swiss Chard, Tomatoes, Turnips, Zucchini (ends middle of Oct.”

The feeling of kale-ing it when you pick a fresh bunch of leafy greens from the garden 🥇🤩🌳

With the weather cooling down some dark greens like kale coming into season. We know some people can find these fibrous veggies a bit daunting, so here are some creative ways to utilize them!

-Kale pesto for pasta or pizza dishes
-massaged olive oil kale salad (add-ins up to you!)
-toasted kale chips (amazing brushed with tamari)
-a hearty kale and bean stew

If you want to feel as invigorated as our student pictured here, don’t shy away from this nutrient rich and delicious (if done right) veggie! 🌱

It’s officially fall ya’ll!

Let’s talk seasonal fall produce, root vegetables to be exact. 🥕🥔🍠

Carrots, sweet potatoes, turnips, and russet potatoes are an easy and affordable seasonal addition to any lunch or dinner. These multicolored veggies are rich in micronutrients- and they look pretty on a plate too!

Here some of our students are experiencing the joy of picking their own crunchy fresh carrots straight from the soil.

Making seasonally based cooking accessible and easy for our students is an important part of our programming.

In the theme of getting excited for the upcoming Fall semester, we want to take some time to introduce everyone to our educators. These wonderful human beings are fundamental in helping further our mission and passing on invaluable knowledge.

Today, meet Elle!

“My favorite way to cook is figuring out how to make beautiful food out of whatever ingredients are available.

I like to pay attention to how food changes us as we grow it, buy it, cook it, and eat it, and imagine the endless possibilities of how ingredients and food spaces can be transformed.

I love making glimmering potions and learning about how we can use the plants growing around us right here in New York City for food and medicine. A few things I am enjoying right now are bouldering, skateboarding, and design.”

What a weekend. 💚

A huge thank you to everyone who participated in and attended our fundraising bake sale and block party!!!

With another successful collaborative event on the books we want to focus in on what your support really means.

Every dollar raised from your baked good patronage allows us to do what we love- provide education and outreach across generations and communities.

We are SO excited to introduce you to another of the bakers partnering with us for our fundraising bake sale this weekend- Kevin Clemenceau.

Throughout his childhood in France, Kevin knew he wanted to follow his family’s culinary legacy.

Before working in his family’s bakery at the age of 14, he learned how to bake bread with his father.

In 2012, he graduated with a degree in pastry arts from Campus des Métiers et de l’Artisanat in Joué-lès-Tours, southwest of Paris.

Clemenceau worked in hotels and boulangeries across France for years, most notably as Pâtissier at Four Seasons Hotel George V, Paris in 2015. In 2016, he crossed the Atlantic to work as chocolatier and pastry sous chef at Pitchoun Bakery in Los Angeles with fellow French owners Frédéric and Fabienne Souliès.

In 2017, Clemenceau took first place at the 2017 AUI Pastry Cup held by Albert Uster Imports (AUI) Fine Foods. He clinched the win with his Granny Smith apple entremets with notes of ginger and lemongrass; a double raspberry bonbon; and a tropical bonbon filled with mango. 🥭🥵

Kevin is currently the Executive Pastry Chef at the prestigious hotel.

He will be bringing his specialty, the “Canelé de Bordeaux” pictured in the second slide.

Taking a break from baker features to share a few photos from this summer’s Nourishing Communities: Food Justice workshops!

Fall is quickly approaching and we cannot wait to get started with the semester in October.

Education and advocacy are extremely important to us here at C4I. Each program we provide helps bring a new understanding of food equity and justice to our students who then carry that knowledge into their community and the wider world.

We can’t do it alone!

The fundraising block party and bake sale on September 14th is a tasty and fun way you can contribute to our educational programs. All proceeds help fund our youth program and help us make a difference this season! Link is in bio 💚🌱🧁

Just as important is the non profit organization we have partnered with to make this event possible, .

Down Town Brooklyn Partnership is actively “attracting new businesses and improving the environment for existing companies, facilitating the construction of public spaces and streetscapes that promote an active and cohesive community, supporting and promoting Downtown Brooklyn’s cultural assets, and encouraging a sense of place and an engaged civic community.”

They are also known for throwing extremely fun community-centric block parties.

Calling all chefs with farm-to-table and regenerative-minded culinary experience! Our friends over at located in the extraordinary Maasai Mara wilderness in Kenya are seeking a Food & Beverage Manager / Culinary Director to create a new menu for their luxury ecolodge. Chefs for Impact will be working with Emboo Camp to assist in selecting the chef, and will be there throughout this three month residency to assist in sustainability methods while you will be working alongside their incredible staff in the adventure of a lifetime.
