Oyster farmer and Certified Sommelier Dan Worrell shares how to pair Maryland oysters with Maryland wine, understand merroir, and taste both like a local.

“It’s the same oyster. Just a different story.” Dan Worrell of Fallen Pine Oyster Company is an oyster farmer and certified sommelier, so when he talks about oysters, he tends to talk about them a lot like wine.

The same species of oyster can taste dramatically different depending on where it’s grown. In wine, terroir describes how place shapes what’s in your glass. In oysters, there’s a word for it too: merroir.

For Dan’s oysters, that place is Chincoteague Bay, where the salty, Atlantic-influenced water helps give them their distinctive flavor.

“You’re never going to be able to make it the same each year,” says Elk Run Vineyards' winemaker Julian Wilson. “What you have to focus on is just making the best of the wine that you have, not trying to replicate it, but bringing out the best in the vintage you have that year.”

More than 45 years of Maryland wine means more than 45 growing seasons, and no two have been exactly alike. It also means plenty of time to learn what works, what doesn’t, and what Maryland can do.

We sat down with Julian and co-founder Neill Bassford to talk about the early days of Maryland wine, what they’ve learned in the vineyard, and how Elk Run helped shape the industry along the way.

Advanced Sommelier Ethan Gladner believes Albariño is one of the varieties Maryland does especially well. Originally from Spain's Atlantic coast, the grape is naturally suited to our humid, maritime climate, producing bright, refreshing wines that shine all summer long.

If you're planning one more crab feast before summer slips away, Gladner already has the pairing picked out.

"Albariño has a little salty quality to it. I think it pairs really well with the brininess of crab."
