HCE - Home & Community Educators of Pace, FL (a.k.a as Pace Pea Ridge Homemakers) The Mission of HCE is to strengthen individuals, families and communities through Education, Leadership and Action.

HCE offers educational classes, fun workshops, crafted goods to those in need & more. HCE of Pace is the Santa Rosa district of Florida Home and Community Educators (FAHCE) and is sponsored by the University of Florida/ Home and Community Education (UF/IFAS)

Tropical Mini Cheesecakes with Pineapple Topping 🍍🍰🌴

Ingredients:
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 cup crushed pineapple, drained
- 1/2 cup graham cracker crumbs
- 3 tablespoons melted butter
- 1 tablespoon fresh lime juice
- 1 tablespoon powdered sugar for topping
- Fresh pineapple chunks for decoration (optional)

Instructions:
1. Preheat your oven to 325Β°F (160Β°C) and line a muffin tin with paper liners.

2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and a tablespoon of sugar. Mix until crumbly.

3. Press this mixture firmly into the bottom of each muffin cup to form your crust.

4. In another bowl, beat the cream cheese and remaining sugar until smooth and creamy.

5. Add the sour cream, vanilla extract, lime juice, and drained crushed pineapple into the cream cheese mixture. Beat well until everything is combined.

6. Spoon the cheesecake filling over the prepared crusts in the muffin cups, filling each one about 3/4 full.

7. Bake for about 18-20 minutes or until the cheesecakes are set around the edges, but still slightly jiggle in the center.

8. Once baked, remove the mini cheesecakes from the oven and let them cool at room temperature, then refrigerate for at least 2 hours to set fully.

9. Before serving, beat together the powdered sugar and some crushed pineapple to create a topping, and spoon it over each cheesecake. Add fresh pineapple chunks if desired.

Nutritional Information:
Each mini cheesecake contains approximately 200 calories, with 3 grams of protein and 10 grams of fat.

Florida Home & Community Education Mission Statement The Mission of HCE is to strengthen individuals, families and communities through Education, Leadership and Action. The goal of Home & Community Education (HCE) is to strengthen individuals, families and communities through Education, Leadership and Action. HCE members have cared about families and communities for more than 80 years. Since 1934, HCE members in Florida have named and understood the issues of the day and worked to help families gain control. They have worked together to start the school lunch program, put ratings on TV programs, get seat belt laws on the books, activate rural bookmobiles, reduce estate taxes, and countless other projects. Members also enjoy affiliation with the Country Women’s Council (CWC) and the Associated Country Women of the World (ACWW), which is the largest international women’s organization in the world. HCE members are volunteers and the work performed is valuable to the community. The University of Florida and the Department of Agriculture Extension Service receive reports of the contribution FAHCE members make to use in reports to the state and national government. Volunteers are recognized for their efforts. HCE members also have many opportunities to continue their education, develop leadership skills and participate in community action -- as well as enjoy the social and cultural aspects of their clubs. β€Œ

In Pace, FL, the local group of Home & Community Educators (HCE) routinely operate under the club name of Pace Pea Ridge Homemakers Club and even more commonly referred to as β€œThe Homemakers”. This is the only active HCE group in Santa Rosa County.
