While ChatGPT and other AI platforms can be very helpful for many things, it’s not worth risking your health and life when it comes to food preservation!

🚨 Food Safety Update: AI Has Entered the Kitchen 🚨

AI can help you figure out what to make for dinner with the random ingredients hiding in your fridge.

AI can suggest 17 different ways to use zucchini.

AI can even tell you what side pairs with your frozen pizza.

But ...

AI should not be trusted with home canning recipes.

Why? Because canning isn't intuition — it's science.

A safe canning recipe depends on:
- Exact acidity levels
- Specific ingredients
- Precise processing times
- Following tested recipes

One missing step could turn your homemade salsa into a science experiment that nobody wants to participate in.

For canning and food preservation, stick with trusted sources:
- USDA
- National Center for Home Food Preservation
- Extension materials

Cattle Fitting Worshop

What a great morning! The families of Ottawa County had a great morning interacting learning how to fit on their show projects.

The morning started with a live demonstration from Clay Scott. Then was filled by one on one hands on application from both youth and their parents.

For the Scott Family it truly is a family affair has Clay, Chelsea and Stockton were kept busy by our participants in assisting them with honing their techniques and answering their many questions.

Looking forward to more opportunities like this in the future!

Vacation Season = Scam Season

Vacation Season = Scam Season

Vacation Season = Scam Season
Summer travel season is here, and while many families are busy planning vacations, scammers are busy planning ways to steal money and personal information. Unfortunately, travel season creates the perfect opportunity for scams because people are booking hotels, ordering online, using mobile payment apps, and checking messages quickly while on the go.

Scammers are becoming more sophisticated and often create messages, websites, and listings that look very real. A few extra minutes of caution can help protect your finances and reduce stress during vacation season.

Common Summer Scams to Watch For:
Fake Vacation Rentals
Scammers copy photos from legitimate rental properties and repost them at extremely low prices to attract attention. They may pressure people to pay quickly using wire transfers, payment apps, or gift cards. Always book through trusted websites and avoid payments outside official platforms.

Text Message Scams
Fake text messages claiming unpaid toll charges, package delivery problems, suspicious bank activity, or account issues are extremely common right now. These messages often create urgency and encourage you to click links immediately. Instead of clicking the message link, go directly to the official website or contact the company yourself.

QR Code Scams
QR codes are everywhere now — restaurants, parking meters, travel brochures, and advertisements. Criminals sometimes place fake QR codes over legitimate ones, leading users to fraudulent websites that collect passwords or payment information.

Public Wi-Fi Risks
Free Wi-Fi at airports, hotels, restaurants, and tourist attractions may not always be secure. Avoid logging into bank accounts or entering sensitive information while connected to public networks unless using a secure connection.

Fake Event & Attraction Tickets
Summer concerts, sporting events, fairs, and attractions often attract ticket scams. Be cautious when purchasing from unfamiliar websites or social media sellers.

Smart Ways to Protect Yourself
✔️ Book travel and lodging through trusted websites
✔️ Use credit cards instead of debit cards when possible for added fraud protection
✔️ Never pay with gift cards, cryptocurrency, or wire transfers
✔️ Avoid clicking suspicious links in texts or emails
✔️ Double-check website addresses for misspellings or unusual wording
✔️ Use strong passwords and enable two-factor authentication on important accounts
✔️ Talk with family members — especially older adults and teens — about common scams

Scammers often rely on panic, excitement, urgency, or distraction. Slowing down and verifying information before responding can prevent costly mistakes.

A safe vacation starts with smart choices before you even leave home!

Asking for Help - Some things are too big to handle alone.

Asking for Help - Some things are too big to handle alone.

Asking for help

May is Mental Health Awareness Month and we're spotlighting one of the most powerful coping skills out there: asking for help.

At some point, every single one of us will need to ask for help and get support. The real skill is noticing when — whether that's feeling constantly down, pulling away from people you love, or carrying something that feels too heavy to hold alone.

Reaching out isn't a weakness. It's one of the bravest things you can do, and it's a sign that you believe you deserve better- because you do.

Talk to a parent, coach, teacher, or another adult you trust. And know that 988 (call or text) is always there as a tool for crisis or support.

Mindful Conversations - Mindfulness in Talking with Aging Loved Ones

Have you ever been in the middle of a conversation and felt lost? Maybe your mind was wandering. And at times, we might feel that the person we're trying to talk to isn't paying attention. To converse and be respectful, people need to "be present" and pay attention to each other. Life is full of distractions, our cell phones being one of the biggest.

Being mindful is the act of self-awareness in any given moment, even pausing in the middle of a situation to pay attention to how you feel, what is happening around you, and the entire situation.

The OSU Extension fact sheet "Mindful Conversations: Using Mindfulness in Talking with Aging Loved Ones" https://extension.okstate.edu/fact-sheets/mindful-conversations-using-mindfulness-in-talking-with-aging-loved-ones provides easy steps, tips, and explanations on how to have mindful conversations. The steps include listening, nonverbal cues, and speaking.

Communication is a two-way street. Conversations with aging loved ones is very important and extra attention may be needed. Practice mindful communication and remember to put the person before their diagnosis. Words have power!

Ottawa County 4-H members recently put their cooking, teamwork, and creativity to the test during the exciting Ottawa County 4-H Food Showdown and Cupcake Wars contests. Youth participants demonstrated valuable life skills while preparing dishes, solving challenges, and presenting their creations to judges. The 4-H Food Showdown challenged teams to work together under time limits to create a dish using four mystery ingredients and a shared common pantry. Participants practiced important skills, including communication, critical thinking, food safety, kitchen organization, nutrition knowledge, and public speaking as they explained their recipes and cooking process to judges.
The Cupcake Wars contest allowed members to showcase their decorating talents by designing creative cupcakes with themed decorations and unique flavor combinations. Youth learned time management, teamwork, nutritional substitutes, and artistic presentation while having fun in the kitchen.

“These contests give youth the opportunity to build confidence and develop real-life skills in a hands-on environment,” said Jamie Foster, FRTEP FCS/4-H Educator. “Through cooking activities, 4-H members learn teamwork, leadership, decision-making, and responsibility while exploring healthy foods and creativity.”

Food Showdown Teams: Grace Anderson, Kaylyn & Molly Wise-Fairland 4-H. Layson Johnson-Miami 4-H, Addison Dry & Chloe Merit-Fairland 4-H. Josiah Dorey, Jace Riggs-Austin, & Braydon Johnson-Miami 4-H.

Cupcake Wars Teams: Addison Dry & Josiah Dorey. Grace Anerson, Kaylyn & Molly Wise. Chloe Merit. Jace Riggs-Austin & Braydon Johnson. Madi Goforth-Wyandotte 4-H & Layson Johnson.

The events encouraged enrolled 4-H youth to step outside their comfort zones, work collaboratively, and gain experience presenting in front of others. Family members, volunteers, and community supporters helped make the contests a success by assisting with the cost of supplies. “We are hosting several 4-H Day Camps this Summer for enrolled 4-H members, “ Foster said. “ Watch our page for updates, OSU Ottawa County Extension.”

Oklahoma 4-H Youth Development programs focus on helping young people gain knowledge and life skills through hands-on learning experiences. Programs such as Food Showdown and Cupcake Wars help youth discover interests in nutrition, culinary arts, communication, and leadership.
