Here are four flourless pancake recipes in one post:

1. Banana Oat Pancakes:

• Ingredients: 1 ripe banana, 2 eggs, 1/2 cup rolled oats, 1/2 teaspoon baking powder, dash of cinnamon (optional).
• Instructions: Mash the banana in a bowl, then add eggs and mix well. Stir in rolled oats, baking powder, and cinnamon. Cook pancakes on a skillet over medium heat until golden brown on both sides. Serve with your favorite toppings.

2. Cottage Cheese Pancakes:

• Ingredients: 1/2 cup cottage cheese, 2 eggs, 2 tablespoons almond flour, 1/2 teaspoon baking powder, dash of vanilla extract.
• Instructions: Blend cottage cheese, eggs, almond flour, baking powder, and vanilla extract until smooth. Cook pancakes on a skillet until golden brown. Serve with fresh fruit or yogurt.

3. Sweet Potato Pancakes:

• Ingredients: 1 cup cooked sweet potato (mashed), 2 eggs, 2 tablespoons almond flour, 1/2 teaspoon baking powder, dash of nutmeg (optional).
• Instructions: Mix mashed sweet potato with eggs, almond flour, baking powder, and nutmeg until well combined. Cook pancakes on a skillet over medium heat until cooked through. Top with maple syrup or Greek yogurt for added flavor.

4. Peanut Butter Pancakes:

• Ingredients: 1/4 cup peanut butter, 2 eggs, 1 ripe banana, 1/4 teaspoon baking powder, dash of cinnamon (optional).
• Instructions: In a blender, combine peanut butter, eggs, banana, baking powder, and cinnamon until smooth. Heat a skillet over medium heat and pour batter to form pancakes. Cook until bubbles form on the surface, then flip and cook until golden brown. Serve with a drizzle of honey or sliced bananas on top.
