English Muffin Loaves (Low Sodium Version)

Ingredients:
2 packages of dry active yeast
6 cups of unsifted flour
1 tablespoon of sugar
1 teaspoon of salt
2 cups of milk
¼ teaspoon of baking soda
½ cup of water
Cornmeal

Directions:
1. Combine 3 cups flour, yeast, sugar, salt and soda.
2. Heat liquids until very warm (120 to 130 degrees).
3. Add to dry mixture, beat well.
4. Stir in rest of flour to make a stiff batter.
5. Spoon into two 8½ x 4½" loaf pans that have been greased and sprinkled with cornmeal.
6. Sprinkle tops with cornmeal. Cover. Let rise in warm place 45 minutes.
7. Bake in 400 degree oven for 25 minutes.
8. Remove from pans and cool. Makes 2 loaves. Slice and toast. These are delicious.

A recipe of English muffin loaves were requested long time ago in May of 1982 by Caroline Conover, which was from Mrs. Elsie Mockler at P.O. Box 216, Center Moriches, New York, taken from Women's Circle Home Cooking cookbook from November 1982.
