At Community Meal Prep Club last night we made *84 incredible comfort food meals* for donation to .food.drive!

And, as always, had a good time along the way πŸ˜ŽπŸ’œπŸ’«.

We prepared:

✨ Baked Tilapia with Lemon Garlic Sauce served over Mediterranean Pasta with Broccoli, White Beans, and Parmesan

✨ Black Bean, Vegetable, Cheddar Enchiladas with Mexican Corn and Homemade Enchilada Sauce

It’s been awesome seeing folks return to each session! We love the warm community space that we’re building together.

And, the fabulous cocktails/mocktails stirred up by Mary from Stoneham Community Action Network 😍. Last night we enjoyed blood orange sidecars along with a homemade herb feta dip made by moi plus cheddar with spiced tomato relish from .

An opportunity just popped up! I reached out to our waitlist and am also sharing the deets here.

We have a few spots in class this Thursday at our event hosted and sponsored by Incarnation Parish Church in Melrose, 5:30-8:30pm.

Limited space available. Light refreshments served. It will be an enjoyable evening preparing meals for donation to .food.drive!

This awesome crew made *116 meals* last night for donation to .food.drive Community Freezers! ❀️❀️

The snow from the Blizzard of 2026 was melting, the wine was flowing, and good vibes were in abundance. πŸ’ƒπŸ»πŸ’«

Nothing like coming together after a looonnnggg week to relax, connect, and cook up a storm for the community!

With two + years of running Community Meal Prep Clubs under our belt, we have tried A LOT of different recipes.

And this one has been an all-around favorite. ☺️🧑✨

The Sweet Potato Soup from is made with golden sweet potatoes, vegetable stock (we make our own but you don’t have to!), onions & garlic, apples, ginger, warming spices, and finished with coconut milk.

Hard to believe it’s plant-based and gluten-free! πŸ’«πŸ’«

Sweet Potato Soup 🍠🍠
GF/vegan

Ingredients
2 TB extra-virgin olive oil
1 medium yellow onion, chopped
1 tsp sea salt
Freshly ground black pepper
3 medium sweet potatoes, 1Β½ pounds, peeled and cubed
1 apple, peeled and chopped
3 garlic cloves, grated
1 tsp grated fresh ginger
1 tsp ground coriander
Β½ tsp smoked (or sweet) paprika
1 tsp apple cider vinegar
3 to 4 cups vegetable broth
1 (14-ounce) can full-fat coconut milk, reserve ΒΌ cup for garnish

Garnish Options: pepitas, fresh cilantro, Aleppo pepper or red pepper flakes

Crusty bread, for serving

Instructions

1. Heat the oil in a large pot over medium heat. Add onion, salt, and several grinds of pepper and sautΓ© until soft, 5 to 8 minutes.

2. Add sweet potatoes and apple. Cook until they begin to soften, stirring occasionally, about 8 to 10 minutes.

3. Add garlic, ginger, coriander, and paprika and stir. Stir in apple cider vinegar and then 3 cups of the broth and the coconut milk. Bring to a boil, cover, and reduce the heat to a simmer. Cook until the potatoes are tender, 20 to 30 minutes.

4. Let cool slightly and pour the soup into a blender, working in batches if necessary, and blend until smooth. If your soup is too thick, add up to 1 cup more broth and blend.

5. Season to taste and top with a swirl of coconut milk and garnishes, if desired.

Notes: This soup thickens as it cools. If reheating it, stir in a little water to recreate a creamy consistency.

The event was hosted and supported by .rev in Stoneham. In a three-hour workshop, together we made *132 meals* for donation to .food.drive community freezer program.

We talked about how quality is just as important as quantity when preparing meals for our neighbors.

In this frigid weather, we planned a menu that warms the body and soul!

✨ Roasted Buttermilk Chicken with Potato Broccoli Cheddar Cheese Bake and Green Beans (GF)

✨ Sweet Potato Bisque (vegan/GF)

On a cold Friday night after a long work week, folks enjoyed small bites and a fresh lemon thyme cocktail provided by Mary from Stoneham Community Action Network. Teamwork at its best in support of a good time together!

So grateful for the opportunity to team up with the incredibly talented to capture the joy and spirit of Community Meal Prep Club!

Back in December, Brian joined us at an event that was co-sponsored by .talwar, her wife Madeline, and their friends and neighbors.

This fantastic crew made Baked Acorn Squash Stuffed with Greens and Sausage (GF), Sweet Potato Bisque (vegan/GF), Roasted Chicken with Potatoes, Veggies and Cranberry Compote (GF), and Apple Crisps.

We donated more than 100 meals to .food.drive community freezer program in time for the holidays! This is just a sample of the gorgeous photos from the shoot.

After two years of running Community Meal Prep Club events, it was clear that this was the next step to build on the rapid growth and impact of the program.

Thank you to each and every class participant and sponsor who joins us to help make nutrient-dense, beautiful meals for our neighbors! πŸ’œπŸ’œ
