Day 3 began with a journey back in time to the pre-historic caves of Mitla. We explored 5 different caves and saw ancient artifacts used for cooking and hunting and some of the earliest recorded writings of the Zapotecs. In one of the caves we were able to join in on a ritualistic Zapotec ceremony of gratitude where we constructed an offering of flowers, corn, beans, and incense.
Before heading to lunch we stopped by El Jaguar, a community seed bank created to ensure the preservation of the crops native to the area.
We ended the day with a tour of a local family’s farm where we saw the harvest and production of mezcal from the agave plant. Following the demonstration, we joined the family in their garden to pick the herbs and vegetables we used in our cooking class.
We ended the day with full hearts and fully bellies!
