The pantry has an excellent supply of ground meat (beef & turkey) and dried pasta. That sounds like a winning combination.

1️⃣ A Fast, Basic, One-Pot, Goulash recipe (works great, just as it is).

2️⃣ Choose-Your-Own-Adventure and transform your basic casserole into exciting global cuisines just by changing the herb and spice combinations.

1️⃣FAST, BASIC, ONE-POT, GOULASH
From prep to finish—in about 30 minutes

INGREDIENTS
• 2 Tbsp. olive oil
• 1 onion, chopped
• 3 garlic cloves, chopped
• 1 1/2 lb. ground beef (or ground turkey)
• 1 (15 oz.) can beef broth
• 1 15-oz. can tomato sauce
• 1 15-oz. can diced tomatoes
• 1 Tbsp. Worcestershire sauce
• 1 tsp. seasoned salt
• 2 tsp. dried Italian seasoning
• 1 Tbsp. ground paprika
• 1/2 tsp. ground black pepper
• 2 cups elbow macaroni
• 1 cup sharp cheddar cheese, grated
• Chopped fresh herbs, like parsley, chives, or dill, optional

DIRECTIONS
• Place the oil in a large Dutch-oven or pot and place over medium-high heat. Once hot, add the onion and cook until slightly softened, about 3 minutes. Add the garlic and cook 1 more minute. Add the meat, breaking it up into little pieces with a wooden spoon, and cook until no pink remains, about 5 minutes. If a lot of liquid or fat remain in the skillet, drain most and discard.
• Add the beef broth, tomato sauce, diced tomatoes, 1/2 cup water, Worcestershire sauce, seasoned salt, Italian seasoning, paprika, and ground black pepper. Stir to combine and return to a simmer.
• Add the macaroni and return the pot to a simmer once again. Reduce heat to medium low and cook for about 12 minutes, until the macaroni is tender, stirring occasionally. Remove from the heat and fold in the cheese. Stir until it is completely melted into the sauce. Serve topped with chopped herbs, if you like.

• Aromatics: Minced garlic and a pinch of fennel seeds.

🇲🇽 MEXICAN (Smoky & Earthy)
• Key Spices: Ground cumin, chili powder, and smoked paprika.
• Aromatics: Onion powder, garlic powder, and dried Mexican oregano.
• Finishing Touch: Fresh cilantro and a squeeze of lime juice.

🇬🇷 GREEK (Warm & Bright)
• Key Spices: Ground cinnamon (just a pinch), ground nutmeg, and dried marjoram.
• Aromatics: Garlic and dried mint.
• Finishing Touch: Crumbled feta cheese stirred in at the end.

🇲🇦 MOROCCAN (Fragrant & Exotic)
• Key Spices: Ground coriander, Cumin, and Ginger.
• Warm Notes: A small pinch of cinnamon and ground allspice.
• Finishing Touch: Fresh mint leaves and a handful of toasted pine nuts.

🇫🇷 FRENCH (Floral & Robust)
• Key Spices: Herbs de Provence* (-or- thyme, rosemary, savory, and marjoram).
• Floral Note: A tiny pinch of culinary lavender (*may already be in blend, above).
• Finishing Touch: A splash of red wine allowed to simmer down in the tomato sauce.

They are offering free food, once per month. All you need to do is show up with bags!

We are featuring fresh eggs … along with the pantry staple Canned Tuna. That means tuna salad! On bread for lunch, or atop a bed of crisp lettuce for a cool, refreshing dinner, it suits a summer day.

Tuna salad is an excellent, protein-packed meal. It delivers essential Omega-3 fatty acids for brain development, plus Vitamin D and iron for growing bodies. It is highly customizable, allowing you to easily boost fiber by sneaking in vegetables like celery or carrots.

BASIC TUNA SALAD (highly customizable, see *note1 below)

INGREDIENTS
-- 8 ounces chunk light tuna in water (2 4-ounce cans), drained
-- 1/3 cup dill pickles chopped
-- 1/4 cup onion
-- 1 to 2 celery stalks diced
-- 2 eggs hardboiled and chopped (perfect hardboiled eggs, see **note2 below)
-- 1/4 cup mayonnaise
-- 1/2 cup yogurt (or, 1/2 cup of mayonnaise and 1 teaspoon of lemon juice)
-- 1 tablespoon mustard
-- 1 jalapeño (optional) diced
-- Lemon pepper

INSTRUCTIONS
-- Drain tuna
-- In a mixing bowl break up the tuna with a fork.
-- Add the pickles, onion, celery, and eggs.
-- Add the mayonnaise, yogurt, (jalapeno, if using), and mustard and stir to combine.
-- Season with lemon pepper, to taste.

COLD START
Place your eggs in a single layer in a saucepan and add enough cold water to cover them by at least 1 inch.
BRING TO A BOIL
Heat the saucepan over high heat until the water reaches a rolling boil.
REMOVE FROM HEAT
Immediately remove the pan from the heat source and cover the saucepan tightly with a lid.
LET THE EGGS STAND
Allow the eggs to sit in the hot water, covered. The exact time depends on the size of your eggs:
-- Medium eggs: 9 minutes
-- Large eggs: 12 minutes
-- Extra-large eggs: 15 minutes
ICE BATH (SHOCK)
Drain the hot water immediately. Plunge the eggs directly into a bowl filled with cold running water or ice water to stop the cooking process (and make them easier to peel). Let them cool completely.

We have a “poo load” (scientific term meaning “a whole bunch” 😁) of brown lentils at the pantry. Many of our neighbors give them a “pass” because they do not have good answers to these two questions:
1) WHY would I eat them?
2) HOW would I eat them?

So …
WHY eat them:
Brown lentils are tiny, nutrient-dense powerhouses that keep your heart healthy, stabilize blood sugar, and aid digestion. They offer a fantastic, plant-based way to get plenty of protein and fiber without the fat found in meat.
Eating brown lentils provides a variety of everyday health benefits, including:

HOW to fix them:
SIMPLE & EASY LENTIL SIDE-DISH
This is a simple recipe for a first try at using lentils.

Ingredients _______
-- 1 pound dried brown lentils
-- 2 teaspoons olive oil
-- ½ cup chopped onion
-- 1 cup stock (vegetable or chicken), or water
-- 4 cups water (5 cups of liquid, with stock or water above)
-- 1/2 teaspoon dried thyme
-- 1 bay leaf

-- 2 cloves garlic minced
-- 1 tablespoon ketchup
-- 1 teaspoon Worcestershire sauce
-- ½ teaspoon salt, or to taste
-- ¼ teaspoon black pepper, or to taste

Directions_______
-- Spread the lentils out on a baking sheet and quickly go through them to assure there's no pebbles or other debris. Set aside.
-- Heat a large saucepan over medium high heat and when the pan is hot, add the olive oil.
-- Stir in the chopped onions and sauté for 2-3 minutes or until the onions are softened and slightly translucent.
-- Add the lentils, stock, water, thyme, and bay leaf. Stir to combine and bring to a boil.
-- Reduce the heat to a low simmer and cook for 25 minutes, stirring occasionally.
-- Remove the brown lentils from the heat and stir in the garlic, ketchup, Worcestershire sauce, kosher salt and pepper. Taste for seasonings and adjust as necessary.
-- Serve with fish, poultry or red meat – or just a spoon, this side goes with anything.
