Living Earth Center

Living Earth Center We are a Mankato, MN based non-profit cultivating healthy communities by growing food and connection We manage Mankato's oldest Community Garden.

This organic, two-acre garden provides a vibrant gathering spot for individuals and families to grow food. Beginning in 2021 partnered with Blue Earth County to take over the management of the Blue Earth County Community Farm. Adopting this additional acre of land allows us to expand our produce donation capacity beyond the community garden to help play a more active role in the local food economy

. Our vision for the Farm is to cultivate a community-growing space where people come together from all walks of life to share common ground. It includes engaging volunteers and community members to play an active role in increasing the contribution of organic regeneratively raised produce to our local community partners:

We offer a variety workshops and skill-building classes for both children and adults, host an annual Earth Conference, and seasonal Earth celebrations on Summer and Winter Solstice. Our Resource Library has books and DVDs to check out as well as equipment for canning and food storage.

At LEC we strive to give the people what they want - and right now, THE PEOPLE WANT TO CAN!!

We have a Canning 101 workshopscheduled for Aug 29th which has reached capacity. We started a waiting list, and went to work to find another date that would work for a second session. By the time that date was set in November the waiting list was overflowing with enough people to fill the second class and then some!

So SkyAnne has worked to schedule not only a 3rd session (in January) but also a 4th session (in March)!!

Check our Event Calendar for the full listing of Canning 101 opportunities.

(Scholarships are available for all LEC workshops.)

And a huge thank you to both Sky (who's teaching the workshops) and Centenary UMC (who is graciously letting us use their kitchen space to run the workshops) for being so flexible and willing to make sure that anyone and everyone who wants to learn to can, CAN!

Sunflowers at the farm are reaching harvest season! These large sunflowers are loved by pollinators when blooming and are harvested by volunteers after the petals begin to dry out. Farm Manager SkyAnne said the dried flower pictured is bigger than her hand! 🌻🖐

Wanted to share a few of the cute craft projects from the MRCI Garden Club.
The MRCI Garden Club meets weekly in the community gardens where participants tend their garden plot and do garden-themed activities like the one shared here, from a few weeks back when they were talking about pollinators.

We are thankful for beautiful summer days in the garden! Last weekend, individuals met up for the Native Plant Workshop with Mary Walker. This workshop offered participants a chance to discuss what is working or not in their gardens and received personalized recommendations. The pollinators will be thankful for your work!
