The Mills County 4-H Beef Carcass Contest dinner and program was held on the evening of Sunday August 23rd at the Lakin Building on the Mills County Fairgrounds.

The event started with an educational program featuring unique beef dishes from around the world and a beef carcass USDA Quality and Yield Grading workshop.

All attendees were able to sample beef cooked in methods popular in Japan, Korea, and Mexico.

The Japan station featured USDA Prime thin sliced ribeye and short rib served Shabu Shabu style. Shabu Shabu is roughly translated into “swish swish”. In this style beef is gently moved back in forth with chop sticks in a pot of boiling broth giving the beef a lighter texture and cleaner feel on the palate.

The Korean station featured USDA Prime Galbi (boneless short rib) and highly marbled thin sliced grain fed beef tongue served Korean bbq style on a hot grill. Communal style eating is very common throughout South East Asia and Korean bbq never fails to stimulate great conversation and create an interactive dining experience. When matched with ponzu sauce and salt it is an incredibly rich and delicious meal.

The last taste of the world featured authentic Mexican Barabacoa made from beef cachetes (beef cheek meat). This dish was served on corn and flour tortillas with a splash of lime.

The USDA Quality and Yield grading session was conducted with a primal 107 bone in ribeye and a primal 174 shortloin. The USDA quality grade determining factors of skeletal age, marbling, and lean color and texture were all reviewed. The yield grade portion taught how fat depth over the eye muscle, carcass weight, ribeye area, and KPH (kidney, pelvic and heart fat) all contribute to the overall final USDA yield grade.

To wrap up the night a meal was served consisting of pit smoked shredded beef sandwiches, potato salad, and baked beans. During the meal the results of the carcass contest were shared and discussed with many thoughtful questions being asked.
