Meet Esteban A. Penados! 🇬🇹

He a Master’s student in Meat Science at Texas Tech University! Originally from Petén, Guatemala. Esteban serves as a Graduate Research Assistant under Dr. Blake Foraker, where he is at the cutting edge of his field. His research focuses on implementing image segmentation and computer vision tools to characterize marbling fleck patterns within beef carcasses, essentially using technology to “visualize” quality in a whole new way.

Beyond the lab, Esteban is a vital part of the Davis College community. Whether he is supporting the Gordon W. Davis Meat Science Laboratory, TAing for Domestic Animal Anatomy, or serving on the executive board of Zamoraiders, he is dedicated to leadership and collaboration. Esteban’s long-term goal is to bring these emerging technologies back to Guatemala to foster a more efficient, data-driven beef industry.🥩🍖

Meet William Mejía! 🇬🇹

He is a Master’s student and Graduate Research Assistant in Agricultural & Applied Economics at Texas Tech University!

A 2023 graduate of Zamorano University in Agribusiness Management, William is now advancing their expertise through an MS in Agricultural Economics under the supervision of Dr. Luis Sandoval. Their work bridges the gap between complex data and the practical realities of international trade.

His research focuses on fertilizer trade and agricultural input markets in Central America, using applied econometrics to understand what drives N–P–K fertilizer imports. By analyzing everything from macroeconomic conditions to weather variability, William aims to build more resilient supply systems and support better decision-making for both policymakers and the private sector. 📈🌱

A proud Zamorano grad (Class of ‘17), Dr. Tabora earned both her M.S. and Ph.D. right here at Texas Tech! Now a Postdoctoral Associate at the University of Florida, her research sits at the vital intersection of ecological management and public health. From controlling invasive species to wastewater-based epidemiology, Dr. Tabora is using her expertise in environmental toxicology to protect both our ecosystems and our communities. Meet Jean Pierre Zavala Varela! 🇪🇨

He is a PhD student and Graduate Research Assistant in Agricultural & Applied Economics at Texas Tech University!

Jean Pierre is a true global scholar, bringing a wealth of academic and professional experience to the Davis College. A 2014 graduate of Zamorano University, he also holds an MBA from EAE Business School and recently completed his Master’s at Purdue University in 2025. With over seven years of hands-on experience in Ecuador’s agricultural sector, Jean Pierre is now working under the supervision of Dr. Luis Sandoval.

His current research leverages applied economic analysis to develop low-cost diet solutions and optimize food systems through data-driven decision-making. For Jean Pierre, the PhD journey at Texas Tech is all about transforming high-level economic theory into practical, real-world solutions that can improve agricultural efficiency and food security worldwide.

Brenda Mamani, our PhD student in Agricultural and Applied Economics, recently traveled to Louisville, Kentucky, to deliver an oral presentation titled “Semi Hypothetical, Real Consequences: A Pilot Designing Incentivized Choice Experiment Under Partial Availability” at the Southern Agricultural Economics Association.
Also representing us on the national stage was Luis Salazar, a Master’s student in Food Science, who attended the International Production & Processing Expo in Atlanta, Georgia.

Meet Nathaly Vargas! 🇪🇨

She is a doctoral student in the One Health Science program at the Texas Tech University School of Veterinary Medicine! Originally from Ecuador and a member of the Zamorano Class of 2019, Nathaly serves as a researcher and facilitator for educational programs specializing in livestock veterinary medicine, necropsies, and field communication. Working under the supervision of Dr. Elpida Artemiou, her expertise lies in Andragogical Scholarship, the study and application of educational strategies for adults.

Nathaly designs and implements bilingual, practical training for veterinarians and industry workers, seamlessly integrating effective communication, educational technology, and experiential learning to bridge the gap between science and the field.
