As promised in my Week Ahead I told my audience that I would share my special recipe addition to an old family favorite dish that my mom taught me to make when I was a kid. Thus was my Sunday dinner and this is to encourage youth to try a new recipe as a means to self care and enjoy cooking it's super fun and I promise my youth center will definitely have a cooking class! This is called Salmon Croquettes with a can of Alaskan Salmon mixed with green onions, garlic, 2 eggs, bread crumbs (I usually use the end of a regular piece of bread as my mom showed me years ago but I don't eat bread so I added a half of a Thomas English Muffin and it turned out great) and white onions with paprika, Himalayan salt, pepper and a pinch of tajin for flavor. Form into patties and sprinkle cracker crumbs on each side (I used regular saltine crackers and some veggie flavored crackers mixed with it and it tasted great). I fried them in coconut oil (super healthy to cook with). I had quinoa (healthier than rice) and some yummy carrots for my veggie!

I had leftovers so I mashed this down into a plastic container to freeze and last night I made a Salmon loaf like meatloaf with bread crumbs and BBQ sauce to garnish 5 minutes before it's done. Bake the salmon loaf for about 20 minutes. Bon appetit...one day I will record a video of me cooking one of my fave dishes so you can follow along

Girl Scouts Volunteer Recognition Ceremony last night at Wilshire Ebell Theater!
Hey RainbowUP Village besties! I just wanted to share some photos from an event I attended last night for one of our major sponsors - Girl Scouts! They honored their volunteers for their hard work and dedication to all of the many girls in many troops for the good of their development and the good of our planet overall. Girl Scouts rocks and I am so glad to be a life long member and be associated with them! The CEO Theresa Edy Kiene is a super awesome person and I totally respect her guidance for girls!
