A year and a half ago, I met through food relief work during the LA fires. A month of nonstop communication, making sure thousands of people were fed. Then life happened. I moved to Canada, he moved on to his next project, and we went our separate ways.

January 2026, I sent a message to our group chat: I’m back in LA. Can you believe it’s already been a year since the fires?

Now, six months later, Greeny is opening his dream restaurant and I’m so lucky he’s trusted me to be part of this journey. ♥️

Opening a restaurant is no small job. But working alongside a team with this much experience, drive, and heart has been a true blessing. Honestly? The past three years have been a constant internal battle over whether the kitchen was even a place I wanted to be anymore.

This team gave me the space, trust, and support to find out. And I did. It’s where I’m meant to be.

We open tomorrow. Come see us. .deli 🥯

It starts with the bagel itself.

The ancient heirloom whole wheat flour.
The sourdough starter.
The 72-96 hours of cold fermentation.
The formation of each bagel by hand.
The boiling in organic barley malt syrup.
The blasting in our ripping hot convection ovens, alternating between full steam saturation and bone dry.

The crunch. The tender but chewy crumb. The aroma. The rustic flavor of that heirloom whole wheat.

Maybe some schmear? Butter? Or maybe we go a little bigger?

Hell yes.

It’s Thursday, which means that we’re *also* on our 4th day of no fresh bagels from the oven.

A year and a half (and hundreds of thousands of bagels) into this journey and we’re *still* pumped for those bagels.

We’ll be back this Fri-Sun, 8-2. You can come order in person or skip the line and order loosies over at mustardsbagels.com.
