Well we experiment and it turned out amazing. My boy wanted some ham steaks. So I said let’s dry curing a whole pork butt as they are easier to get ahold of. I EQ a whole pork butt just like I do Bacon. Added dried orange zest and New Mexico chili powder. Then cold smoked for 60 hours. Them let it hang in the walk in for almost a month. Well I didn’t get it cut into steaks but I cooked like a gammon ham in a water bath for Easter. Turned out amazing.

Life has been crazy. This is the benefit of cold smoking versus hot smoking. I had 5 bellies, a whole loin and two pork butts that I cured and cold smoked. They have been hanging in the walk-in all month. Just slicing them up this week and they are amazing. Hot smoked meat would have gone bad. But not cured cold smoked meats. Old school. This is 8 1/2 lbs. of Chinese 5 spice bacon. So yummy
