It’s RALLY WEEK!!
The Sturgis Motorcycle Rally has always had a special place in my heart. I grew up on the back of my daddy’s motorcycle, and the first time I was at the Rally was at the 50th anniversary, when I sat on dad’s shoulders to get a picture of Main Street. Then, as an adult, I covered the Rally for the newspaper, and I’ve done it every year for over 25 years. I’ve always found bikers to be the best people!
Hope’s Kitchen is closed for Rally week, because I need to cover the event for the newspaper. But we will be open for all Lead-Deadwood residents and visitors on Aug. 22!

Here is the recipe for the lasagna I posted Sunday night. I realized on Monday that I forgot to post it! Let me know if you try it, and what you think of it!! We’re cookin’!

4 layer lasagna

1st layer
1 onion, diced
1 green or yellow pepper
1 lb ground beef
1/2 tsp salt 1/4 tsp pepper
1/2 tsp garlic powder 2 cups spaghetti sauce

Brown ground beef with onion and pepper. Combine remaining ingredients with ground beef mixture.

2nd layer
1/2 tbs butter
1 zucchini, diced
1 cup sour cream
1 cup ricotta cheese
1/4 cup bread crumbs
1 tsp salt
1/2 tsp pepper

Sautee diced zucchini with butter. Combine all other ingredients. Mix zucchini in after slightly browned

3rd layer
1 tbs olive oil
2 garlic cloves
1/2 tsp salt
1/2 tsp pepper
1/4 tsp red pepper flakes
1 bag fresh spinach

Combine ingredients in frying pan and sautee spinach until wilted.

4th layer
1/4 cup shredded Parmesan
1/4 cup shredded Monterey Jack cheese
1/4 cup shredded cheddar
1/4 cup heavy cream
2 cups spaghetti sauce

Combine all ingredients in bowl

Spread thin layer of ground beef mixture on bottom of pan. Place oven ready lasagna noodles on bottom. Continue with layers 1-4 in order, finishing with 4th layer on top.
Bake at 400 degrees for 90 minutes.

* can sub carrots for zucchini

Photo is Sunday brunch at the Pitlick’s house! This is a favorite family tradition! Throughout the week, we hardly have time all together as a family. Sunday brunch is the only guaranteed time we are all together around the table. So, I try to make it extra special!!

WOW!!!
Thank you Sabers safety group, from Black Thunder Coal Mine in Gillette, Wyo.! Bryan stopped by my office today to drop off a $6,370 check for Hope’s Kitchen.
We are incredibly grateful for this amazing donation!! But that’s not the best part.
The best part is where this money came from.
The company has a safety program that encourages employees to fill out voluntary safety reports, to help each other understand best practices, so that each employee goes home safe and healthy every day. Each month, SABERS picks a noble cause and the coal mine donates $10 for each safety report that is turned in.
This donation means there were 637 employees who care about safety enough to fill out these reports and help their fellow coworkers create a safer environment.
I think that is amazing!
I promised these guys that, this donation will be used to provide free, hot meals, for as many Lead-Deadwood residents and visitors as we can.
Neighbors helping neighbors to be safe and healthy!
I love it!!!!
