I asked ChatGPT if I picked these squash too early. This was the answer - the last line made me chuckle! 😆
Those look like white pattypan (scallop) summer squash, and from the photo they look completely normal to eat.
The pale green tint is actually a good clue that they were harvested young, not that anything is wrong with them. In fact, many gardeners intentionally pick pattypans at this stage because:
The skin is more tender.
The seeds are small and soft.
The flavor is mild and sweet.
They don't need peeling.
The smallest one on the left is at what many people consider the ideal eating size. The other two are still well within the "young summer squash" stage.
A few ideas for using them:
Slice and sauté with butter, garlic, and herbs.
Cut into wedges and roast with olive oil and parmesan.
Slice thinly and add to stir-fries.
Dice into a vegetable medley with those fresh beans I see in the background.
