Culinary Workers Union Local 226 Fighting and winning for Nevada's working families for 90 years! The Culinary Union has been fighting for working families in Nevada for 86 years.

Culinary Union members work as: Guest room attendants, cocktail and food servers, porters, bellmen, cooks, bartenders, laundry and kitchen workers. Culinary Workers Union Local 226 and Bartenders Union Local 165, Nevada affiliates of UNITE HERE, represent 60,000 workers in Las Vegas and Reno, including at most of the casino resorts on the Las Vegas Strip and in Downtown Las Vegas. UNITE HERE repre

sents 300,000 workers in gaming, hotel, and food service industries in North America. The Culinary Union has a diverse membership which is 55% women and 45% immigrants. The demographics of Culinary Union members are approximately: 54% Latinx, 18% white, 15% Asian, 12% Black, and less than 1% Indigenous Peoples. The Culinary Union is Nevada’s largest Latinx/Black/AAPI/immigrant organization with members who come from 178 countries and speak over 40 different languages. We are proud to have helped over 18,000 immigrants become American citizens and new voters since 2001 through our affiliate, The Citizenship Project.

In Chapter 5, titled The Machine The Culinary Union of Las Vegas, Nevada, Hamilton writes:

If there is a redeeming quality to Las Vegas, it is that it has allowed generations of regular working people-often immigrants with few opportunities elsewhere-to conjure a decent living out of the desert sands.....many decades of hard-fought labor organizing. The Culinary Union has led that work since
1935. Today, the union has sixty thousand members, including the housekeepers and porters and bellmen and food servers and cooks and other workers at virtually every casino on the Vegas Strip, as well as a large chunk of the off-Strip casino industry in Nevada. Those members are 55 percent women and 54 percent Latino, and 45 percent of them are immigrants. The union provides guaranteed contracts, free health care, and a pension to all these workers and their families. It is, in a very real sense, an independent social safety net, built from scratch, that has created a middle class where there otherwise would not have been one. To support and protect this mission, the Culinary Union has also built a relentless political operation that has made it one of the most powerful political forces in Nevada. There is now only one degree of separation between an immigrant single mother cocktail waitress at the Tropicana and the White House.

*On August 20th, the Nevada Housing Justice Alliance, along with Culinary Union members, community partners, and directly impacted Nevadans, hosted a rally demanding rent stabilization ahead of the legislature’s final meeting of the Joint Interim Committee on Commerce and Labor. Nevadans called on the members of the committee during public comment, demanding that rent stability be supported and passed by the committee during the 2027 legislative session so that Nevadan renters can have relief and remain housed.

*On August 21, 2026, Culinary Union members, Shop Stewards, and Station Casinos workers leafleted outside Station Casinos properties across Las Vegas. Stations workers need a raise!

*Culinary Union members from across the city are participating in Department Meetings to enforce our BEST contract language EVER!

Las Vegas Review Journal: Las Vegas hospitality braces for AI, but automation leads the way [July 21, 2026]

Culinary Union...negotiated a contract in 2018 requiring advance notice before employers introduce technology that could affect jobs. The latest contract, ratified in 2023, also extends health care and pension benefits for workers displaced by new technology.

“There’s no other way to deal with this other than having a strong union contract,” said Ted Pappageorge...
..since the contract was updated..., the union has invoked technology protections outlined in the contracts “multiple times every month.”

While artificial intelligence is explicitly referenced in both contracts, the new technology being introduced in Las Vegas’ hospitality industry has largely taken the form of automation, including mobile ordering systems, cleaning robots and a broader use of tablets...
